Ingredients:

  • 5 liters of milk in sachet
  • 1/2 tablespoon liquid coagulant (rennet)
  • 2 tablespoons of filtered water
  • salt to taste

Method of preparation:

  1. Put the milk in a large saucepan and heat until it reaches a temperature of 36°C.
  2. Remove from the heat, add the coagulant dissolved in the water and mix.
  3. Cover and leave to rest for 40 minutes.
  4. Check if the milk is hard, if it is, make cuts with a knife on all sides.
  5. Let stand for another 5 minutes and stir lightly with a spoon.
  6. Divide the dough into 5 molds suitable for cheese making and press lightly to extract all the whey.
  7. Leave to rest for 5 hours, turning a few times.
  8. When it is solid, sprinkle the cheeses with salt and let them rest in the molds in the refrigerator for another 3 hours, always draining the excess whey.
  9. Remove from the molds and refrigerate until ready to serve.
