Ingredients:
- 1.2 kg of diced bacon
- 1/2 cup (tea) of oil
- 6 spoons of cachaça
- salt to taste
Cheese sauce
- 200 g of grated mozzarella
- 50 g of grated provolone
- 1 jar of cream cheese (200 g)
- 1/2 cup (tea) of milk
- 1 box of cream (200g)
- salt to taste
Method of preparation:
- Place the pancetta in a heavy-bottomed skillet with the cold oil and bring to high heat until it releases its fat and then begins to brown.
- Lower the heat and carefully add the cachaça.
- Increase the heat again and fry until golden brown, stirring occasionally.
- Drain, drain on paper towels, sprinkle with salt, and then set aside.
- Meanwhile, for the sauce, put the mixed cheeses, ricotta, milk and sour cream in a pan.
- Bring to low heat, stirring until cheese melts.
- Transfer to ceramic pot.
- Serve the bacon immediately with the cream cheese.
