Ingredients:
- 1 cup ricotta cheese passed through a sieve
- 1 cup wheat flour (tea)
- 1/2 cup butter (salted)
- margarine for greasing
- 1 egg yolk for brushing
Filling
- 300 g of cream cheese
- 200 g chopped pineapple in syrup
- 300 g of minced ham
- Salt and black pepper to taste
Method of preparation:
- Mix all the ingredients of the dough and knead well to a smooth consistency.
- Divide the dough into equal sized balls
- Line tart molds greased with margarine with the mixture, leaving a little of the batter out of the mold to finish
- For the filling, mix all the ingredients
- Fill the cake with a dessert spoonful of the filling, coat the cake with the remaining dough and brush with the egg yolk.
- Bake for 20 minutes or until golden brown
- Serve immediately.
Tuna pie and cream cheese

Ingredients:
- 1 package of crustless bread (250 g)
- 1 cup of catupiry® type curd
- Cherry tomatoes and straw potatoes for garnish
tuna filling
- 2 tablespoons of olive oil
- 1/2 chopped onion
- 2 cans of whole drained tuna
- 1/2 cup chopped green olives
cream cheese spread
- 2 cups cream cheese (tea)
- 1 cup cream (milk)
- Chopped parsley to taste
Method of preparation:
- For the tuna filling, heat a frying pan with olive oil over medium heat and saute the onion until golden brown
- Add the tuna, the olives and quickly sauté
- Turn off and then book
- Meanwhile, for the cream cheese, mix all ingredients together and set aside.
- To assemble, in a medium English pie pan, lined with aluminum foil, make layers of bread, tuna filling, breadcrumbs, and cream cheese spread
- Repeat the layers, ending with the bread.
- Refrigerate for 1 hour. Unmold, unmold onto a tray and cover the whole cake with Catupiry®
- Decorate with cherry tomatoes and straw potatoes before serving.

Ingredients:
- 2 tablets of fresh brewer’s yeast (30g)
- 1 tablespoon of salt
- 2 tablespoons of sugar
- 2 cups of milk (tea)
- 4 tablespoons butter at room temperature
- 2 eggs
- 5 cups wheat flour (tea)
- Soft wheat flour for flouring
- margarine for greasing
- 1 egg yolk for brushing
Filling
- 20 slices of mozzarella cut into 3 pieces
- 20 slices of ham, cut into 3 pieces
- 2 cups cream cheese (tea)
- 1 teaspoon (coffee) of oregano
Method of preparation:
- In a bowl mix the yeast, salt and sugar until dissolved
- Add the milk, butter, egg and mix
- Add the flour, a little at a time, mixing with your hands until a homogeneous mass is formed.
- If necessary, add more flour
- Cover and let rest for 30 minutes
- Roll out the dough on a floured surface until it is thin and cut it into small rectangles.
- On each rectangle put a piece of mozzarella, a piece of ham and then a portion of cream cheese mixed with oregano.
- Roll them up into small rolls and place them in a large greased pan, side by side.
- Cover and leave to rest for another 30 minutes.
- Brush with egg yolk and bake in a preheated medium oven for 25 minutes or until golden brown.
- Withdrawn, transfer to a plate and serve after.

- 20 mini pita breads
- Olive oil for greasing and brushing
- Parsley leaves and pink pepper to garnish
- cream cheese spread:
- 1 cup cream cheese (tea)
- 2 tablespoons of olive oil
- 2 tablespoons of chopped parsley
Method of preparation:
- For the cream cheese spread, beat the cream cheese, olive oil and parsley in a blender for 1 minute.
- Place in a pastry bag fitted with a pitanga tip and set aside.
- Meanwhile, brush the sandwiches with olive oil and spread them out in a large greased baking dish.
- Bake in a preheated medium oven for 8 minutes or until lightly browned.
- Remove from the oven and then leave to cool
- Decorate with the cream cheese on the toasted buns and garnish with parsley leaves and pink pepper.
- Serve immediately.

- 1 Italian bread
- 1 cup cream cheese (tea)
- 1 cup mozzarella (chopped)
- 1 cup turkey breast (diced)
- 1 cup cherry tomatoes (halved)
- Mozzarella for dusting
Method of preparation:
- Cut a lid on the Italian bread and remove the core
- Mix the cream cheese, mozzarella, turkey breast and cherry tomatoes and then place them inside the bread
- Sprinkle with the mozzarella and bake in a preheated medium oven for 10 minutes to brown
- Remove from the oven, cut into pieces and serve immediately.

- 1 1/2 cups cream cheese
- 1 cup of butter (tea)
- 5 eggs (whites and yolks separated)
- 2 1/2 cups (tea) wheat flour
- 2 1/2 cups (tea) sugar
- 1 tablespoon of chemical yeast
- Margarine and wheat flour for greasing
- 1/2 cup (tea) guarana flavored soda for sprinkling
- Coconut flakes to decorate
filling and stuffing
- 1 1/2 cups (tea) creamy dulce de leche
- 1 1/2 cups cream cheese
- 1 box of cold cream (200g)
- 4 tablespoons of icing sugar
Method of preparation:
- Beat the cream cheese with the butter in the mixer for 5 minutes
- Add the egg yolks, one at a time, beating after each addition.
- Add the sifted flour and sugar and mix until smooth.
- Add the yeast and the whipped egg whites and mix gently with the cream.
- Pour into a greased and floured 26cm diameter pan and bake in a preheated medium oven for 35 minutes or until a toothpick comes out clean.
- Leave to cool and unmold
- Meanwhile, for the filling/topping, beat the dulce de leche with the cream cheese in a mixer for 3 minutes.
- Add the cream and beat until smooth
- Still beating, add the sugar little by little.
- Then divide into 3 parts and set aside
- Cut the cake into 3 parts with a bread knife or string and divide the soda into 3 parts
- To assemble, place a slice of cake on a large plate, sprinkle with 1 part soda and cover with 1 part filling.
- Repeat the process with the cake, soda and the remaining cream, making layers and then finishing with the cream smoothing well over the whole cake.
- Sprinkle with coconut and refrigerate for 1 hour before serving.
Passion fruit mousse with cream cheese

Ingredients:
- 2 egg whites
- 1 tablespoon of sugar
- 1 cup Philadelphia® cream cheese
- 1 can of ice cream
- 1 can of condensed milk
- 1/2 packet of unflavored gelatin powder
- 1 cup of natural passion fruit juice
Syrup
- Pulp of 1 passion fruit
- 1 tablespoon of sugar
- 3 tablespoons of water
Method of preparation:
- Beat the egg whites with the sugar until stiff and set aside.
- Meanwhile, beat the cream cheese, heavy cream and condensed milk in a blender for 1 minute.
- Mix gelatin with juice and dissolve in a water bath
- Pour into a blender and blend to combine.
- Pour into a bowl, add the egg whites kept aside and mix gently.
- Transfer to the refractory and leave to rest in the fridge for 3 hours.
- For the syrup, heat the passion fruit pulp, sugar and water over low heat for 3 minutes.
- Leave to cool, remove the mousse from the fridge and then cover with the syrup
- Serve immediately.
