- 2 tablespoons of olive oil
- 2 minced garlic cloves
- 1/2 chopped onion
- 4 chopped tomatoes
- 1 can of tomato sauce
- 1/2 cup (tea) of water
- salt to taste
Meatball
- 2 tablespoons of olive oil
- 1/2 chopped onion
- 2 diced aubergines
- 2 eggs
- 1/2 cup Parmesan (grated)
- 2 cups breadcrumbs (tea)
- Salt and black pepper to taste
Method of preparation:
- Heat a frying pan with olive oil over medium heat and saute the onion and eggplant until soft.
- Transfer to a bowl and mash with a fork.
- Then mix the eggs, Parmesan, breadcrumbs, salt and pepper until a homogeneous mass is formed.
