Ingredients:
- 1 cup fresh ginger, peeled and grated (you can do that if you want to chop it up)
- 130 g of sugar
- 500ml of filtered water
- sparkling water
- 1 lemon juice
- juice of 1 lime (or you can substitute the juice and zest of 1 lemon)
- mint leaves or peppermint (optional)
Method of preparation:
- In a saucepan, boil the grated ginger (or pieces), the sugar and the filtered water.
- Keep stirring until all of the sugar has dissolved and the liquid has concentrated to a “syrup” consistency. The time can vary from 15 to 30 minutes.
- Then remove from the heat and let stand until it cools down.
- Once cold, pass this mixture through a sieve to remove the pieces of ginger, as we will only need the liquid part.
- In a glass with ice, fill about 1/4 of the glass with the syrup and fill the rest with soda water.
- The measure will be 1 part syrup to 3 parts sparkling water.
- Finally, add the lemon juice, the lime juice, and a few mint leaves (or pennyroyal) to decorate and give a light flavour.
- Now all you have to do is mix it all up and enjoy the drink.
