How to desalinate cod: tips and how to do it correctly

How long does it take to desalinate cod?

Depending on the thickness, cut or type of cod, the average desalination time is quite varied. To be sure of the right level of salt, it is best to taste the cod while changing the water – remove a small piece from the inside of the fish and see if it is good – do not let the cod lose all its salt, the cod is tasteless left without its signature flavor – see instructions below.

  • Chopped or in Chips – on average 6 hours, change the water in half the time.
  • Thin steaks – on average 12 hours, changing the water at least 3 times.
  • Normal posts – on average 24 hours, change the water every 6 hours.
  • thick slices – from 40 to 48 hours, always changing the water every 6 hours.

How to desalinate cod?

  1. Wash the cod well under cold running water to remove the external salt crust, this will speed up the desalination process.
  2. Put the cod in a container, if it has the skin, leave it facing up. Cover with water – on average 4 liters of water for every kilogram of fish. Always use cold water, preferably cold – cold water speeds up the desalination process. It’s also common to add a few ice cubes.
  3. Cover the container with a lid or plastic film and keep it in the refrigerator to prevent the spread of microorganisms which act in a humid environment and under the action of heat, even moderate, which can leave the fish with a strong odor or even ruin it (leave all the time in the refrigerator and the water must always be very cold).
  4. Change the cod water at least every 6 hours, always with cold or ice water, because the salt leaves the fish and goes into the water.
  5. If at the end of the suggested time the cod is still salty, continue the process up to the seasoning level you use in cooking.
  6. At the end of desalination, wash it with plenty of running water before use.
