French fries, no fries
- 2 units of asterix potato or monalisa potato
- Corn oil or olive oil, for dressing
- salt
- pepper – optional
PRE-PREPARATION:
- Separate recipe ingredients and utensils.
- Preheat the oven to 190°C
- Grease the mold(s) you will be using with a drizzle of oil.
- For best use of potatoes and their nutrients, keep the peel.
- Prefer the asterix potato, as it has less water than the monalisa potato.
- Start cutting potatoes (see preparation)
PREPARATION:
- One of the secrets of french fries is the cut. Try to make them the same thickness so they cook evenly.
- Cut the potatoes into slices about 1 cm thick.
- Then make 1cm strips on each slice.
- Dry with absorbent paper.
- Arrange the sliced potatoes in the greased mold(s), without overlapping them.
- Sprinkle with salt, pepper (optional).
- Season in a zig-zag fashion with a drizzle of oil or olive oil (not extra virgin).
- Bake until golden brown, as pictured – time may vary, depending on each oven.
- When they start to brown on one side, flip the pan over so they brown evenly in the oven.
- Before taking them out of the oven, check the cooking: make sure they are soft inside and crunchy outside.
- Turn off the oven, keep warm until ready to serve, with the oven off and slightly open.
FINISHING AND ASSEMBLY:
- Serve hot, accompanying your dishes such as a homemade hamburger, a good grilled steak or parmigiana or whatever you like.
