Ingredients:
- 5 egg whites
- 4 cups sugar (tea)
- 1 teaspoon(s) of lemon juice
- lemon zest to decorate
Cream
- 1 can of condensed milk
- 1 lemon juice
- 1/2 cup (tea) of milk
- 1 teaspoon cornstarch
Method of preparation:
- For the custard, in a saucepan, mix the ingredients, bring to medium heat, stirring until thickened. Let cool.
- In electric mixer, beat egg whites.
- In the middle of the process, add the sugar and lemon juice, little by little, until stiff peaks form.
- Transfer into a pastry bag fitted with a pitanga tip and, on a baking tray lined with baking paper, cut out 5 cm diameter discs.
- Make borders on the circles forming a basket.
- Place in a medium, preheated oven for 15 minutes or until set. Let cool.
- Finally, transfer the cold cream into a pastry bag with a cherry nozzle and fill the baskets with meringue.
- Decorate with the lemon zest and serve immediately.

Ingredients:
- 8 egg whites
- 2 1/2 cups (tea) sugar
- Zest from the zest of 1 lemon
- 1 teaspoon cream of tartar (coffee)
- margarine for greasing
Method of preparation:
- First beat the egg whites in a mixer on high speed until stiff.
- Add the sugar, a little at a time, without stopping whipping.
- Then add the lemon zest and cream of tartar and continue beating until it stops.
- Then turn off and transfer the cream into a pastry bag with a pitanga beak.
- Make drops, side by side, in a form lined with greased butter paper.
- Bake in a preheated oven for 30 minutes or until golden and brown.
- Finally remove from the oven, let it cool, unmold and serve.

- 10 egg whites
- 3 cups sugar (tea)
- Zest from the zest of 1 lemon
Method of preparation:
- Beat the egg whites with a mixer at high speed and add the sugar little by little, without ceasing to beat.
- Add the lemon zest and continue beating until you get a thick cream.
- Turn off the mixer and put the cream inside a pastry bag.
- Drain onto a greased baking sheet lined with parchment paper and bake in the oven over low heat for 1 hour or until cooked through and lightly browned.
- Remove from the oven.
- Leave to cool before removing from the parchment paper and serving.
