Caramelized banana:

  • 3 1/2 bananas, sliced ​​lengthwise (or enough to cover the bottom of the pan)
  • 1 cup (tea) of sugar
  • 1 tablespoon of butter

Caramel Banana Cake (INVERTED) – from a blender:

  • ½ banana, sliced ​​or chopped
  • 2 large, whole eggs
  • ¼ cup oil (tea)
  • ⅓ cup (tea) yogurt or whole milk (you can also use curds)
  • 1 cup breadcrumbs (finely sieved)
  • ¾ cup sugar (tea)
  • ½ teaspoon of vanilla essence
  • 1 teaspoon of baking powder

PRE-PREPARATION:

  1. Start by caramelizing the bananas (see preparation). For this, choose a form that can be fired and in the oven (made of aluminum or iron, for example). For 2 portions, use a 20×20 cm round or square pan. Warning: the choice of shape is important, as the idea of ​​this cake is to look like a cake once ready.
  2. Separate the other utensils and recipe ingredients.
  3. Sift the breadcrumbs into a bowl.
  4. Preheat the oven to 180°C.

PREPARATION:

Caramelized banana:

  1. Peel and slice the bananas lengthwise, if the banana is too large, cut the slices in half so they don’t overlap when placed in the mold.
  2. Put sugar and butter in the form in which the cake will be baked.
  3. Bring to low heat to melt and acquire a light caramel color – keep turning the shape so that the caramel reaches the sides of the shape as well.
  4. Arrange the bananas on top of the caramel, filling the entire bottom of the mold.
  5. Continue the pre-preparation (step 2).

Caramelized Banana Cake – from blender:

  1. Slice or chop the remaining banana.
  2. Blend the banana, eggs, oil, yoghurt or milk, vanilla essence and sugar in a blender until you obtain a smooth cream.
  3. Decrease blender speed and add breadcrumbs.
  4. Lastly add the yeast.
  5. If your blender doesn’t have the horsepower to beat the flour and baking powder, finish this step in a bowl, mixing everything really well.
  6. Pour the cake batter into the caramelized shape with the bananas.
  7. Place in a preheated oven at 180°C and cook for 20 minutes or the time sufficient to cook the cake, this time can vary according to your oven, the shape chosen and the final height of the cake (which in this recipe should be thin, to look like a cake).
  8. To confirm that the cake is cooked, do the toothpick test, if it comes out dry it is ready, otherwise continue until completely cooked.
  9. Remove from the oven and place the mold – always with the cake inside – over low heat, in a flame that can cover most of the bottom of the mold.
  10. To see if the caramel has “released”, lift one side of the cake slightly. If so, you’re ready to flip.
  11. Turn the still hot cake onto a cutting board, let the caramel drain a little. Then transfer to a platter.

FINISHING AND ASSEMBLY:
