Ingredients:
- 1 piece of clean lizard (about 1.2 kg)
- Salt, black pepper and chopped parsley to taste
- 4 tablespoons of oil
- 1 piece of sliced Calabrian sausage
- 1 chopped onion
- 4 crushed garlic cloves
- 1 pinch of cayenne pepper
- 2 tablespoons of mustard
- 1 can of dark beer (350 ml)
- 2 beef bouillon cubes
- 1 bay leaf
- 2 cups squash (diced)
Method of preparation:
- Season the lizard with salt and pepper.
- In a large pressure cooker, heat the oil over high heat and brown the lizard. Remove and reserve.
- In the same pan fry the pepper sausage in its own fat, until it starts to brown.
- Add the onion, garlic, pepper and fry for 3 minutes.
- Return the meat to the pan and add the mustard, tomato sauce, beer, beef stock and bay leaf.
- Cover the pan and cook for 40 minutes, over low heat, after starting the pressure.
- Allow the pressure to release naturally, open the pan and remove the meat.
- Put the pan with the sauce back on a low heat, without pressure, and cook for 15 minutes, adding the diced pumpkin halfway through cooking.
- Season with salt, pepper and green odor.
- Serve the sauce over the sliced lizard and with the squash and peppers around it.
