Ingredients:
- 1 can of drained green corn;
- 2 cups (tea) of milk;
- 4 eggs;
- 2 cups (tea) of sugar;
- 1 cup (tea) of oil;
- 1 cup (tea) of cornmeal;
- 2 1/2 cups (tea) wheat flour;
- 1 tablespoon (soup) baking powder;
- Margarine and wheat flour for greasing;
- Ground cinnamon for dusting.
Stuffing and filling:
- 2 cans of drained corn;
- 2 cups (tea) of milk;
- 1 cup (tea) of sugar;
- 2 tablespoons of butter.
Method of preparation:
- Place the corn, milk, eggs, sugar, oil and cornmeal in a blender and blend until smooth. Then transfer the mixture to a bowl and add the wheat flour and baking soda. Mix with a spoon until everything is well incorporated.
- Place a 24cm diameter loaf lined with greased butter paper in a preheated medium oven and bake for 30 minutes or until golden brown. Remove from the oven, leave to cool slightly, unmold and cut the cake in half lengthwise. Reserve.
- To make the filling and topping, place the corn and milk in a blender and blend. Sift the mixture and put it in a saucepan. Then add the sugar and butter and put over medium heat, stirring until thickened. Transfer the mixture to a bowl and refrigerate for 1 hour before assembling.
- Remove from the fridge, mix with a spoon and divide into two parts. To assemble the Festa Junina cake, place one side of the cake on a plate, spread half the curau on top, place the other side of the cake and top with the rest of the curau.
- Refrigerate for two hours, then remove from the refrigerator, sprinkle with ground cinnamon and serve.
2- Pamonha cupcakes
Ingredients:
- 1/2 cup (tea) of oil;
- 4 eggs;
- 2 cups (tea) of sugar;
- 2 cans of drained green corn;
- 1 cup (tea) of milk;
- 1 cup (tea) of cornmeal;
- 2 cups (tea) of wheat flour;
- 1 tablespoon of baking powder.
Stuffing and filling:
- 1 can of drained green corn;
- 2 cans of condensed milk;
- 4 tablespoons of butter.
Method of preparation:
- Start by preheating your medium oven. In the blender, beat the eggs, oil, sugar, corn and milk until smooth.
- In a bowl, mix the cornmeal, wheat flour and baking powder with a mixer or fouet. Line the cupcake liners with paper liners and distribute the batter evenly across the liners.
- Bake in the preheated oven for about 25 minutes, or until golden brown. Let cool. In a blender, beat the corn and condensed milk about 2 minutes. Pass the mixture through a sieve and transfer to a pan.
- Add the butter and bring to medium heat, stirring constantly until the cream thickens. Let cool. Then put the cream in a pastry bag fitted with a pitanga nozzle.
- With a knife make a hole in the center of each cupcake and fill with the cream. Decorate the surface with the remaining cream and serve.
3- Peanut cake with chocolate frosting
Ingredients:
- 3 eggs;
- 1/2 cup (tea) of oil;
- 2 cups (tea) of sugar;
- 1 cup (tea) of milk;
- 2 cups (tea) of wheat flour;
- 1 cup (tea) of roasted and chopped peanuts;
- 1 tablespoon (soup) baking powder;
- Margarine and wheat flour for greasing and flouring;
- Roasted and chopped peanuts for dusting.
Chocolate coating:
- 1 cup (tea) of roasted and chopped peanuts;
- 1 can of condensed milk;
- 2 tablespoons (soup) of chocolate powder;
- 1 tablespoon (soup) butter.
Method of preparation:
- Start by preparing the pie dough; beat eggs, oil, sugar and milk in a blender until smooth.
- Then transfer the mixture to a bowl and add the wheat flour, peanuts and baking soda. Mix everything with a fouet until you get a very smooth and uniform mixture.
- Then, pour the batter into a greased and floured 22cm x 30cm cake tin and place in the preheated medium oven for about 35 minutes, or until the cake is well cooked and golden brown. Let it cool before covering it.
- To prepare the glaze, place the ingredients in a saucepan over medium heat and stir until thickened slightly.
- Wait for the mixture to cool and spread it on the cake. Sprinkle the peanut over the icing and serve the cake in pieces.
4- Corn cake with guava paste
Ingredients:
- 1 can of drained green corn;
- 1 cup (tea) of milk;
- 1/2 cup (tea) of oil;
- 3 eggs;
- 2 cups (tea) of sugar;
- 1 cup (tea) of wheat flour;
- 1/2 cup (tea) cornmeal;
- 1 tablespoon (soup) baking powder;
- 1 cup (tea) diced guava;
- Margarine and wheat flour for greasing and flouring;
- 5 tablespoons of water;
- 1 cup (tea) of creamy guava paste.
Method of preparation:
- In the blender, beat the corn, milk, oil, eggs and sugar until a homogeneous cream is formed. Then gently mix the flour and cornmeal with a spoon and add the yeast, transfer the mixture into a 26 cm diameter mold with a central hole, previously buttered and floured. Bake in a preheated medium oven for about 40 minutes, or until the cake is cooked through and golden brown.
- Remove the mold from the oven and let it cool for a few minutes before turning it out. In a pan, dissolve the guava paste with a little water over low heat, stirring constantly.
- Drizzle the cake with the guava syrup, allowing it to run down the sides. And your delicious June holiday cake is ready.
