  • 1 cup bacon (diced)
  • 1 diced onion
  • 4 crushed garlic cloves
  • 1 1/2 cups okra (minced)
  • Juice of 1/2 lemon
  • 1 diced tomato
  • 1/2 cup corn (drained)
  • 1 1/2 cups parboiled rice
  • 1 table spoon of saffron
  • 4 cups boiling water (tea)
  • Salt and chopped parsley to taste
  • 1 cup chopped drained heart of palm (minced)

Method of preparation:

  1. Season the chicken with the chicken stock powder.
  2. In a large pressure cooker, heat the oil over high heat and fry the chicken until golden brown. Reserve.

  2. Add half the onion, half the garlic and saute for 3 minutes.
  3. Pour hot water, salt, pepper and cover.
  4. Cook for 25 minutes, over low heat, after starting the pressure.
  5. Wait for the pressure to release naturally and open the pan.
  6. Place the meat on a plate and set aside.
  7. Wash the okra and dry it with a cloth or paper towel.
  8. Season with lemon juice.
  9. In a skillet, saute the okra over medium heat in the oil with the remaining garlic and onion, stirring, until it releases all its slime and dries up.
  10. Put the meat back in the broth, add the tomatoes, salt and pepper and cook for 10 minutes, stirring occasionally.
