Ingredients:
- 1 can of condensed milk
- 2 tablespoons of butter
- 4 tablespoons of cocoa powder
- 1 1/2 cups chopped Brazil nuts
- Butter for greasing
Method of preparation:
- Put the condensed milk, butter, chocolate and 1/2 cup (tea) chestnuts in a pan.
- Bring to medium heat, stirring constantly, until it thickens and comes loose from the bottom of the pan. Turn off, transfer to a greased plate and leave to cool.
- Form balls with oiled hands and pass them in the remaining Brazil nuts.
- Put in paper cups and serve.

Ingredients:
- 1/2 cup chia flour (tea)
- 1/2 cup whole wheat flour (tea)
- 2 cups wheat flour (tea)
- 1 1/2 cup rolled oats
- 3/4 cup chopped Brazil nuts (tea)
- 1 tablespoon of baking powder
- 1 teaspoon(s) ground cinnamon
- 1 and 1/2 cups warm milk
- 1/2 cup honey (tea)
- 2 eggs
- 3 tablespoons of butter
- 1 cup (tea) of granulated sugar
- 1 cup (tea) of brown sugar
- Margarine and wheat flour for greasing
Method of preparation:
- In a bowl mix the flours, oatmeal, chestnuts, baking powder and ground cinnamon.
- Beat the rest of the ingredients in the blender and mix with the dry ingredients in the bowl, using a wire whisk.
- Place in a large, buttered and floured pan.
- Place in a medium oven, preheated, for 40 minutes or until golden brown.
- Develop after cold and serve.

Ingredients:
- 4 skinless salmon fillets (rich in omega 3)
- Salt and white pepper to taste
- 1/2 cup (tea) ground Brazil nuts (high in unsaturated fat)
- 1/2 cup oatmeal (high in fiber)
- 3 tablespoons olive oil (high in monounsaturated fat)
- 3 thickly sliced potatoes
- Olive oil to taste for greasing and seasoning
Method of preparation:
- Season the salmon fillets with salt and pepper.
- In a bowl mix the ground chestnut, the oatmeal, the olive oil and season with salt.
- Dip the fillets in this mixture.
- In a greased refractory, line the bottom with the potatoes and place the fillets on top.
- Drizzle with olive oil and place in a medium, preheated oven for 15 minutes.
- If desired, serve with grilled vegetables (zucchini, aubergines, cherry tomatoes) and green leaves.

Ingredients:
- 1 egg
- 1/2 cup whole wheat flour (tea)
- 2/3 cup wheat flour (tea)
- 2 tablespoons of sieved cane sugar
- 1/2 cup cold butter (diced)
Filling
- 2 tablespoons of corn starch
- 2 cups of milk (tea)
- 1 cup diced apple (peeled and seeded)
Farofa
- 1/2 pack of savory wholemeal biscuits (85g)
- 1/2 cup chopped Brazil nuts (tea)
- 2 tablespoons of brown sugar
- 1/2 teaspoon(s) ground cinnamon
- 3 tablespoons cold butter, cubed
Method of preparation:
- For the dough, put the egg, flour, sugar, butter in a bowl and mix with your hands until you get the consistency of farofa.
- Line the bottom and sides of a medium springform pan with the batter and place in the preheated medium oven for 15 minutes or until golden brown.
- Remove from the oven and leave to cool.
- For the filling, in a skillet over medium heat, dissolve the cornstarch in the milk, add the condensed milk and stir until thickened.
- Remove from the heat, let it cool and add the apple.
- Pour the filling over the pastry and set aside.
- For the farofa, grind the biscuit in a blender.
- Place in a bowl and add the chestnuts, sugar, cinnamon and butter, mixing with your hands until you get the consistency of farofa.
- Arrange on the cake, unmold and serve.

Ingredients:
- 1 1/2 cups (tea) fresh basil leaves, washed and dried
- 1/3 cup (tea) olive oil
- 1 small clove garlic, diced
- 4 tablespoons pine nuts, Brazil nuts or cashews
- 4 tablespoons of grated pecorino or parmesan
- 1 teaspoon of salt
- 1 package of spaghetti cooked al dente and drained (500g)
- Grated Parmesan for dusting
Method of preparation:
- Blend the basil, olive oil, garlic, pine nuts, cheese and salt in a blender until smooth.
- Drain the pasta, save the cooking water and pour it into a bowl. Drizzle with the sauce.
- Clean the wall of the blender with about 1 ladle of the cooking water kept aside, blend and pour over the pasta.
- Stir, sprinkle with Parmesan and serve.

- 400 g of chopped dark chocolate
- 4 tablespoons of butter
- 6 eggs
- 2 cups sugar (tea)
- 1 tablespoon of vanilla essence
- 1 cup walnuts (chopped)
- 1/2 cup chopped Brazil nuts (tea)
- 1 cup wheat flour (sifted)
- 1 tablespoon baking powder (baking powder)
- margarine for greasing
- Powdered chocolate for dusting
- Chopped walnuts and Brazil nuts to decorate
Roof
- 300 g of melted milk chocolate
- 1 cup cream (milk)
Method of preparation:
- Melt the chocolate with the butter in a bain-marie.
- Transfer to a bowl and, with a thin batter, mix the eggs, sugar, essence, walnuts, chestnuts, flour and baking soda.
- Transfer to a small rectangular shape, greased and sprinkled with powdered chocolate.
- Bake in a preheated medium oven for 30 minutes or until a toothpick comes out clean. Remove from the oven and leave to cool.
- For the glaze, mix the melted milk chocolate and cream until smooth.
- Cut the Brownies into squares, sprinkle with the sauce and decorate with walnuts and chestnuts. Serve immediately.
