Appetizer – option 1 – Hummus:

Hummus : chickpea pasta, delicious and very easy to make.

  • Equipment: mixer, blender or food processor

Hummus, Arabic chickpea paste, vegetarian and very healthy.

INGREDIENTS:

HUMUS – CHICKPEAS PASTA

  • 250 g of pre-cooked or canned chickpeas (save a few whole chickpeas for decoration)
  • 1 tablespoon lemon juice (juice)
  • 1 minced garlic clove
  • 2 tablespoons of tahini
  • 50 ml of water (see recipe), or enough to take stock
  • Salt and pepper to taste

To decorate:

  • Optional sweet paprika, for sprinkling
  • Parsley or mint, chopped, for dusting
  • Extra virgin olive oil, for dressing
  • whole chickpeas

Appetizer – option 2 – CRAB CASKIN

CRAB CRUISE, PREPARE in advance and FREEZE.

Crab shell, au gratin and with a taste of the sea.

INGREDIENTS:

Siri cone:

  • 250 g of shredded crabmeat – clean
  • ¾ lemon (juice)
  • salt to taste
  • pepper to taste
  • olive oil or bottle butter to taste
  • palm oil (optional)
  • ¼ large onion, diced
  • ½ red pepper, deseeded, chopped
  • 2 small, minced garlic cloves
  • 1 tomato, peeled and deseeded, chopped
  • 1 tablespoon of tomato paste
  • ¼ cup iced tea to dilute the cornstarch.
  • ¾ tablespoon cornstarch
  • chopped coriander to taste

Finish :

  • grated parmesan or breadcrumbs – just enough to brown.
  • To serve:
  • Lemon, quartered to taste
  • Pepper sauce to taste, served on the side.

FIRST: Shrimp risotto

Shrimp Risotto:

  • 1 tablespoon(s) onion, minced
  • 1 cup(s) of arborio rice
  • 30 ml of dry white wine
  • 600 ml of homemade prawn broth (see recipe), or enough to flavor the risotto
  • 1 packet of saffron (optional), dissolved in a little water
  • 1/2 unit(s) Sicilian lemon (zest and juice)
  • 2 tablespoons of extra virgin olive oil

Homemade Shrimp Broth:

  • 1 liter of water
  • 1/2 unit onion, roughly chopped
  • 1/2 unit leek (optional), thickly sliced ​​- white part.
  • shrimp shells and heads
  • 1 unit(s) of laurel
  • thyme (sprigs)
  • 5 units/corns of black pepper
  • salt

Finish:

  • parsley (optional), chopped
  • 1/4 unit(s) Sicilian lemon (zest)
  • extra virgin olive oil for dressing
