Curau de Milho Verde: the traditional sweet of the June holidays, made with green corn, with only 4 ingredients and cinnamon

CREAM OF GREEN CORN

Green Corn Cure Ingredients:

  • 2 ears of medium corn
  • 300ml whole milk or coconut milk
  • 1 teaspoon unsalted butter (wholemeal)
  • 50 g of refined sugar

Finish:

  • ground cinnamon to taste (optional)

PRE-PREPARATION:

  1. Assemble the ingredients and utensils for the recipe.
  2. Remove the straw and hair from the cobs and wash them well under running water.
  3. Cut the corn kernels very close to the cob.

PREPARATION:

Green Corn Cream:

  1. In a blender or food processor, beat the corn, gradually adding half the milk or coconut milk, until finely ground.
  2. Pass the mixture directly into a pan through a fine sieve, adding the remaining milk. Squeeze well to get rid of all the liquid and discard the bagasse.
  3. Add the butter and sugar and cook over medium heat, stirring with a spatula or whisk.
  4. When it boils, lower the heat and keep stirring continuously for about 30 minutes or until the mixture is cooked and the cream thick.
  5. Add more milk if needed, being careful not to form lumps or stick to the pan.

FINISHING AND ASSEMBLY:

  1. Turn off the heat and transfer the Green Corn Cream on a plate or portion into individual bowls.
  2. Leave to cool and sprinkle with ground cinnamon.
