The Paraná company mush has developed a technology capable of transforming agri-food residues into a paste that can be used in the production of design objects and biodegradable and sustainable coatings. Renata Guirau, nutritionist at Oba Hortifruti, shared a bit about the benefits of including mushrooms in your diet.

As for storage and hygiene, Renata explains that they must be kept in the fridge, as they are delicate. The advice is to put a paper towel in the container to absorb the humidity. If properly stored, they can last up to 10 days. It is not recommended to wash mushrooms, because they are very porous, just wipe them with a damp paper towel.

creamy mushrooms
- 200 g of sliced Parisian mushrooms
- Shitaki slices of 200 g
- 2 medium onions chopped
- 2 chopped tomatoes
- 3 crushed garlic cloves
- 1 tablespoon of butter
- 1 tablespoon of wheat flour
- 250ml of milk
- 100 g grated parmesan
- Salt and oil to taste
Method of preparation:
Heat the oil, fry the onion. Add the chopped mushrooms and tomato. hit the
salt and cook. For the sauce: heat the butter and sauté the garlic. Add the
milk and wheat, cooking until starting to thicken. Add grated cheese, cook
for another 5 minutes. Add the sauce to the cooked mushrooms and serve immediately.
Mushroom risotto
- Shitaki slices of 250 g
- 50 g of porcini mushrooms
- 1 medium onion chopped
- 3 crushed garlic cloves
- 1 cup of arborio rice
- ½ glass of dry white wine
- 80ml Sicilian lemon juice
- 150 g of grated Parmesan
- Salt and chives to taste
- 1 liter of homemade vegetable broth*
- 2 tablespoons of olive oil
* Homemade vegetable broth:
Cook 1 carrot + 1 onion + 1 garlic clove + 1 celery stick + 3 bay leaves + salt
to taste + 1 liter of water.
Method of preparation:
Heat the oil and sauté the onion and garlic. Add the chopped mushrooms and brown well. Add the rice, wine and Sicilian lemon juice and let it evaporate. Gradually add the vegetable broth, stirring constantly over low heat. Hit the salt. When the rice is al dente and creamy, add the cheese and turn off the heat. Finish with the chopped chives and serve immediately.
Braised Shimeji
- 2 cups ground shimeji tea
- 1 tablespoon of butter
- 50ml of shoyu
- 2 tablespoons chopped chives
Method of preparation:
Heat the butter in a pan. Add the chopped shimeji when the butter is melted. Add the soy sauce and saute until the shimeji is cooked through. Turn off the heat and add the chopped chives. Serve immediately.
