Chicken parmesan recipe with rustic tomato sauce

Ingredients:
- 4 chicken breast fillets
- Salt and black pepper to taste
- 1 and 1/2 cups wheat flour for dusting
- 3 beaten eggs for breading
- 1 1/2 cups breadcrumbs for dusting
- 2 tablespoons of grated Parmesan
- Fry oil
- 8 slices of mozzarella
- chopped parsley for sprinkling
Sauce
- 2 tablespoons of olive oil
- 1 chopped onion
- 1 bay leaf
- 1 teaspoon(s) of minced ginger
- 1 teaspoon (coffee) of cayenne pepper
- 1 unpeeled apple, diced
- 1 1/2 cups diced canned tomatoes
- Salt and black pepper to taste
Method of preparation:
- For the sauce, in a skillet heat the oil over medium heat and sauté the onion, bay leaf, ginger and pepper for 3 minutes.
- Add apples and tomatoes.
- Cook over low heat for 5 minutes, stirring occasionally.
- Season with salt, pepper and set aside.
- For the chicken, cover the fillets with plastic wrap and tap them with a hammer to thin them.
- Season with salt and pepper.
- Roll the fillets in the flour, the beaten eggs with the salt and the breadcrumbs mixed with the Parmesan.
- Fry in boiling oil, in immersion, drain on absorbent paper and place in a medium refractory.
- Cover the fillets with the reserved sauce and arrange two slices of cheese on top.
- Bake in a high oven (200º C), preheated, for 10 minutes.
- Sprinkle with parsley and serve immediately.
