Ingredients:

  • 4 cups cooked rice (tea)
  • 1 grated carrot
  • 2 eggs
  • 100 g of grated mortadella
  • 1 chopped onion
  • 2 tablespoons of chopped parsley
  • Salt and black pepper to taste
  • 1 cup of milk (tea)
  • 1 cup wheat flour (tea)
  • 50 g of grated parmesan
  • 1 teaspoon baking powder (coffee)
  • Fry oil

Method of preparation:

  1. In a bowl, put the ingredients and mix well.
  2. Form balls and fry them in boiling oil until they are golden brown.
  3. Remove from heat, drain on absorbent paper and serve immediately.

Ingredients:

  • 2 tablespoons of oil
  • 1 grated onion
  • 1 minced garlic clove
  • 1/2 cup desalted, cooked and shredded beef jerky
  • 1 piece of Calabrian sausage cut into cubes
  • 3 cups cooked white rice (tea)
  • 1 egg
  • 4 tablespoons of grated Parmesan
  • Salt, black pepper and chopped parsley to taste
  • Fry oil

Method of preparation:

  1. Heat a pan with oil over medium heat and saute the onion and garlic for 2 minutes.
  2. Add the meat and peppers and fry for another 3 minutes.
  3. Let cool.
  4. Pass the rice through a sieve or mash it with a fork.
  5. Add the stew, egg, cheese, salt, pepper and parsley.
  6. Knead with your hands until smooth.
  7. Shape dumplings into round or slightly elongated shapes.
  8. Fry, a little at a time, in hot oil until golden brown.
  9. Drain on absorbent paper and serve.

Ingredients:

  • 3 cups cooked white rice (tea)
  • 3 tablespoons of butter
  • 1/2 cup (tea) of milk
  • 3 tablespoons of wheat flour
  • 1 cup ham (grated)
  • 1 cup mozzarella (grated)
  • 1/2 cup chopped parsley (minced)
  • salt to taste
  • 1 cup breadcrumbs (tea)
  • Fry oil

Sauce

  • 2 cloves of garlic
  • 1/2 cup milk (cold)
  • 1/3 cup chopped parsley (minced)
  • 1/2 cup oil (approximately)
  • salt to taste

Method of preparation:

  1. For the sauce, beat the garlic, milk and parsley in a blender and add the oil, slowly, until a thick sauce is formed, adding more oil if necessary.
  2. Season with salt and set aside.
  3. Quickly beat the rice, butter, milk and flour in the blender without letting it grind completely.
  4. Pour into a bowl and add the ham, mozzarella, parsley, season with salt and mix until a homogeneous mass is formed.
  5. Model elongated gnocchi, roll them in breadcrumbs and fry them in boiling oil until golden brown.
  6. Drain on absorbent paper and serve with the sauce.

Method of preparation:

  1. In a bowl, mix all ingredients until smooth.
  2. In a frying pan, heat the oil over medium heat and fry the gnocchi, by the spoonful, making them drip directly into the hot oil.
  3. Fry until golden brown, drain on absorbent paper and serve.

  • 1 cup minced and fried Calabrian sausage (tea)
  • 2 1/2 cups cooked white rice
  • 1/2 tablespoon minced garlic
  • 2 crushed garlic cloves
  • 100 g grated parmesan
  • 1 egg
  • 1 yolk
  • 2 tablespoons of wheat flour
  • 3 tablespoons of chopped parsley
  • Salt and black pepper to taste
  • Fry oil

Method of preparation:

  1. On a plate put the peppers, rice, garlic, parmesan, egg, egg yolk, flour and parsley.
  2. Add salt, pepper to taste and mix all the ingredients, kneading with your hands until a firm consistency is obtained.
  3. Divide the dough and form the dumplings.
  4. In a frying pan, fry the snacks in hot oil until golden brown.
  5. Remove and drain on paper towels.
  6. Serve immediately.

  • 1 sachet of vegetable seasoning
  • 1 egg

  • Soft wheat flour for breading
  • Fry oil

Filling

  • 1 cup mozzarella (grated)
  • 1 cup Parmesan (grated)
  • 1 cup of grated provolone
  • 2 tablespoons of cream cheese

Method of preparation:

  1. In a bowl, mix the milk, rice, seasoning, egg, parsley, margarine, flour and salt to form a smooth mass, add more flour if necessary.
  2. Open portions of dough with your hands, fill with the mixed ingredients of the filling and close to form balls.
  3. Roll them in wheat flour and fry them, a little at a time, in boiling oil.
  4. Drain on absorbent paper and serve immediately.
