Breaded chicken stuffed with zucchini and cheese

Time: 1 hour

Performance: 4 portions

Difficulty: easy

Ingredients:

  • 2 chicken breasts
  • 2 minced garlic cloves
  • Salt and black pepper to taste
  • 1 cup wheat flour (tea)
  • 3 beaten eggs
  • 1 cup breadcrumbs (tea)
  • Fry oil

Filling

  • 2 tablespoons of olive oil
  • 2 minced garlic cloves
  • 1 chopped courgette
  • Salt and chopped parsley to taste
  • 1 cup mozzarella (grated)

Method of preparation:

  1. For the filling, heat a frying pan with olive oil and saute the garlic and zucchini for 3 minutes or until al dente.
  2. Season with salt and the scent of greenery, mix and turn off the heat.
  3. Leave to cool, mix with the mozzarella and set aside
  4. Meanwhile, use a knife to cut each chicken breast in half, forming 4 halves.
  5. Cut each half in half, without separating the parts, forming 4 large fillets
  6. Cover each fillet with plastic wrap, then pound with a meat tenderizer until thin and uniform.
  7. Season with garlic, salt and pepper
  8. Divide the filling between the 4 fillets and fold them in half.
  9. Secure with toothpicks, roll in wheat flour, beaten eggs and breadcrumbs.
  10. Fry, two at a time, in hot oil until golden brown
  11. Drain on absorbent paper and serve immediately.
