Breaded chicken stuffed with zucchini and cheese

Ingredients:
- 2 chicken breasts
- 2 minced garlic cloves
- Salt and black pepper to taste
- 1 cup wheat flour (tea)
- 3 beaten eggs
- 1 cup breadcrumbs (tea)
- Fry oil
Filling
- 2 tablespoons of olive oil
- 2 minced garlic cloves
- 1 chopped courgette
- Salt and chopped parsley to taste
- 1 cup mozzarella (grated)
Method of preparation:
- For the filling, heat a frying pan with olive oil and saute the garlic and zucchini for 3 minutes or until al dente.
- Season with salt and the scent of greenery, mix and turn off the heat.
- Leave to cool, mix with the mozzarella and set aside
- Meanwhile, use a knife to cut each chicken breast in half, forming 4 halves.
- Cut each half in half, without separating the parts, forming 4 large fillets
- Cover each fillet with plastic wrap, then pound with a meat tenderizer until thin and uniform.
- Season with garlic, salt and pepper
- Divide the filling between the 4 fillets and fold them in half.
- Secure with toothpicks, roll in wheat flour, beaten eggs and breadcrumbs.
- Fry, two at a time, in hot oil until golden brown
- Drain on absorbent paper and serve immediately.
