Cream of Potatoes with Mushrooms

ingredients

  • 4 large potatoes, peeled and sliced
  • 1 small onion
  • 1/2 glass of dry white wine
  • 1 tablespoon of cottage cheese
  • 1/2 cup grated Parmesan
  • Salt and truffle oil to taste
  • 1 tray of sauteed portobello or paris mushrooms
  • 1 tablespoon of butter

Method of preparation

fry the mushrooms with the butter and set aside. Cook the cut potatoes, the onion and at the end of cooking add the wine. When everything is cooked, with a mixer, make a homogeneous cream. Filling

  • 3 eggs
  • 200 ml of whole milk
  • 200 ml of fresh cream
  • 1 tray of Parisian mushrooms
  • 1/2 red onion cut into julienne strips
  • 100 g of gouda cheese
  • Ground black pepper to taste

Method of preparation

Put the flour and salt in a bowl. Add the cubed butter. With your fingertips, mix the dough until it reaches a farofa consistency. Add the beaten egg and mix well. Freeze for 30 minutes wrapped in a beeswax cloth or plastic wrap. After that time, open the dough between the plastics or directly in the form.

Filling

In a bowl, beat three eggs, add the milk and cream. With the dough open, poke holes in the dough with a fork. Put the cheese into small pieces, the mushrooms cleaned and cut into small pieces, the onion and add the base cream. Leave 1 finger from the edge of the shape, as this will do grow up a little.
