Complete aquafaba mayonnaise recipe

Ingredients:

  • 1/2 cup cold aquafaba
  • 2 tablespoons of lemon juice
  • 2 minced garlic cloves
  • 1/2 teaspoon mustard
  • 1 cup of cold, neutral-flavored vegetable oil
  • salt to taste

How to prepare:

  1. First, put all the ingredients – except the oil – in a tall bowl or blender.
  2. With mixer or blender, beat for 3 minutes at maximum frequency.
  3. Then, still beating, add the oil a little at a time so that the mayonnaise takes on consistency. Tip: If you are using a mixer in preparation, constantly move from top to bottom.
  4. When it is homogeneous and creamy, transfer your mayonnaise into an airtight container and keep it in the fridge for 1 hour (so that it remains cold) before consuming it. Tip: If the mayonnaise goes away, just add more oil little by little and beat more.
