RICE CAKE WITHOUT WHEAT AND WITHOUT FRYING

Ingredients for Fried Wheat Free Rice Balls:

  • 1 cup leftover rice (cooked)
  • 1 minced garlic clove
  • ¼ onion(s) chopped
  • pepper to taste (optional)
  • salt to taste
  • Earth saffron (turmeric) or curry (pinch)
  • 1 medium egg + 1 yolk
  • 1 tablespoon of cassava flour
  • 2 tablespoons of corn starch
  • 2 tablespoons of grated Parmesan
  • ¼ teaspoon baking powder
  • chopped parsley to taste
  • chopped green onion to taste
  • oil – for cooking and greasing the pan(s).

PREPARATION:

  1. Gather all the ingredients and utensils for the recipe.
  2. Crack the eggs into a small bowl and beat them lightly, just to combine. Separate the yolks and add them to the bowl with the rest of the eggs. Beat to mix.
  3. Wash and peel the garlic and onion and chop them.
  4. Wash and dry the parsley and spring onions, chop them and put them aside on absorbent paper.
  5. Grate the Parmesan if you have not bought it grated.
  6. Grease the pan(s) with oil.
  7. Preheat the oven to 220°C: the gnocchi will be cooked.

PREPARATION:

Wheat-free, no-fry rice cake:

  1. Put the cooked rice in a bowl and add the onion, garlic, salt, pepper, beaten egg(s) with the yolk(s), chopped parsley and chives and mix, with a spatula, to incorporate the ingredients.
  2. Then add the grated cheese, cassava flour, cornstarch, saffron or curry powder, and baking powder.
  3. Stir again until a homogeneous mass is formed.
  4. Take a quantity of dough, using a spoon as a measure, and shape the ravioli.
  5. Arrange the dumplings on one or more greased baking sheets, side by side, as if they were separate mounds (queneles).
  6. Put a drizzle of oil on each one.
  7. Bake in a preheated oven at 220°C for 12-15 minutes or until golden brown.

FINISHING AND ASSEMBLY:

  1. put the rice balls without wheat and without frying on a platter to serve, or if you prefer spread it out on plates, next to your main course.
  2. These dumplings go very well with various dishes and can also be served as an appetizer.
