Ingredients:

  • 1kg of sugar
  • 1 cup of water (tea)
  • 10 cloves
  • 3 cinnamon sticks
  • 2 kg of peeled and chopped green papaya

Method of preparation:

  1. In a saucepan put the sugar, water, cloves and cinnamon
  2. Bring to a boil and simmer for 12 minutes or until it becomes a thin syrup.
  3. Add the papaya and boil for another 30 minutes or until softened.
  4. Once cold put it in a compote
  5. Refrigerate until ready to serve immediately.
