Bean stew biscuit

  • 2 liters of water
  • 1/2kg of black bean
  • 100 g of dried meat, desalted and cut into cubes
  • 100 g of smoked loin cut into cubes
  • 100 g of desalted or smoked ribs
  • 1 pepper sausage cut into cubes
  • 1 pair of sausage cut into cubes
  • 3 bay leaves
  • 5 cloves garlic, minced
  • 200 g of fine raw cassava flour
  • 1 tablespoon acidic cassava starch
  • 2 bunches of cabbage, chopped very finely
  • 250 g of bacon cut into cubes
  • Breadcrumbs for breading
  • Olive oil to taste
  • Fry oil

Method of preparation

To the pressure cooker, add the water, black beans, meat (excluding bacon), and bay leaves. Cook for about 1 hour, after starting the pressure. Then wait for the pressure in the pot to release. In a blender, blend the cooked beans with the broth and meat. In a large pan, heat the olive oil over medium heat, brown 3 cloves of garlic and brown the blended beans. Check the salt and adjust the quantity.

Gradually add the cassava flour, stirring constantly, until it thickens and comes away from the pan. Remove from the heat and leave to cool. Add the tapioca starch and mix until smooth and set aside. In a pan, heat the olive oil over medium heat and brown the 2 cloves of garlic. Add the bacon and brown for a few more minutes. Add the cabbage and sauté for 2 minutes.

Next, roll out small portions of dough between your hands. Add a teaspoon of sautéed cabbage, form balls and flatten them. Dip in breadcrumbs to coat. Fill a pan with oil and place over medium heat to heat. Fry the gnocchi until golden brown. Serve immediately.

In a container, season the fish fillets with lemon juice, salt, garlic and black pepper and mix well. Then, coat the bait with a mixture of wheat flour and corn flour. Fill a pan with oil and place over medium heat to heat. Fry the baits until golden brown. Serve immediately.
