Baked potato recipe with chicken filling

Ingredients:

  • 6 large potatoes weighing approximately 400 g each
  • Salt and black pepper to taste
  • 1 cup cream cheese (tea).
  • 1 cup cooked or roasted leftover shredded chicken
  • 1 cup broccoli (cooked al dente), chopped

Preparation method:

  1. Wash the potatoes well by scrubbing the skin. Dry and pierce with a fork.
  2. Wrap in aluminum foil and bake in a preheated medium oven for 50 minutes or until softened.
  3. Fry the bacon in its own fat until golden brown and drain on absorbent paper.
  4. Unwrap it carefully with a clean, dry cloth and remove the potato lid.
  5. Remove the core with a spoon, leaving a 1cm edge.
  6. Mash the potato with a fork and season with salt, pepper and 1/3 of the cream cheese until it forms a puree.
  7. Fill the potatoes with the mashed potatoes.
  8. Mix the rest of the cream cheese with the chicken and broccoli and fill the potatoes.
  9. Bake in the preheated oven for another 15 minutes.
  10. Carefully remove, sprinkle with bacon and serve the baked potatoes with chicken filling.
