Prince Harry’s wife is a jack of all trades: Meghan is an actress, a public figure and, ultimately, a cook. The Duchess of Sussex considers her signature recipe to be a juicy lemon tart: she makes it with lemons from her own garden in Montecito. And share the recipe!

The press has already talked about Meghan’s legendary pie: Markle prepared it to delight Chicago restaurateurs and received rave reviews from tasters. And now the Duchess is officially a cookbook author, sharing her signature recipe with chef José Andrés, who compiled The World Central Cookbook: Feeding Humanity, Feeding Hope.

World Central Kitchen is a charity specializing in providing meals to people affected by natural disasters. Profits from the sale of the book will be donated to the fund.

Ingredients for Meghan Markle’s Pie

  • 3/4 cup extra virgin olive oil
  • 2 lemons
  • 1 3/4 cup flour.
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon of salt
  • 3 large eggs.
  • 1 1/4 cup sugar
  • 1 teaspoon of vanilla extract.
  • 3/4 cup whole milk

How to make Meghan Markle pie

  1. Preheat the oven to 180°C. Line a pan with parchment paper and spray with cooking spray.
  2. Remove the zest from the lemons.
  3. In a bowl, mix the flour, baking powder and salt.
  4. In another bowl, beat the eggs and sugar for at least 3 minutes.
  5. Add milk, olive oil and zest, beat until smooth.
  6. Then add the flour mixture in three parts, beating on low speed until smooth after each addition.
  7. Pour the batter into the prepared pan and bake for about 45 to 50 minutes or until a toothpick inserted into the center of the cake comes out clean.
  8. Let cool in the pan for about 15 minutes, then cool completely on a wire rack.
  9. Serve garnished with lemon slices and powdered sugar.
