Brigadeiro cake: a buttery and moist chocolate dough, with a sweet topping, everyone likes it
The most famous and loved cake by adults and children with brigadeiro topping.

Ingredients for homemade cakes – Basic dough
– 200 g unsalted butter + a little to grease the pan.
– 2 cups of sugar
– 4 units of eggs, separated whites and yolks.
– 1 cup(s) of milk in some variations is replaced by another ingredient (or another ingredient of your choice)
– 3 cups (tea) wheat flour + a little to sprinkle the pan.
– salt to taste (pinch)
– 1 tablespoon(s) of chemical yeast
Chocolate Cake Ingredients (Homemade Cake – variant 9)
– 1 cup(s) of chocolate powder (added to the basic mixture)
– 1 unit of lemon – juice – added to milk.
TOPING BRIGADEIRO ingredients
– 1 can(s) of condensed milk
– 3 tablespoons of milk
– 4 tablespoons of chocolate powder
– 3 tablespoons of unsalted butter
Ingredients TO DECORATE
– chocolate sprinkles to taste
PREPARATION:
- A complete recipe for this brigadeiro cake equals 4 portions – use a 23cm baking tray.
- Remove the butter from the fridge 1 hour before to bring it to room temperature (ointment point).
- Separate the ingredients and utensils for the recipe.
- Grease the pan with butter and sprinkle with flour.
- Open the eggs and separate the yolks and whites into two bowls.
- Sift the flour together with the chocolate powder.
- Wash and dry the lemon and squeeze the juice.
- Measure the milk into a cup and add the lemon juice.
- Preheat the oven to 180°C.
PREPARATION:
Brigadeiro cake:
- In a planetary mixer, preferably with a paddle attachment, beat the butter with the sugar until you obtain a whitish cream.
- Add the egg yolks, one at a time, and continue beating to combine.
- Using a wire whisk, add the flour, chocolate and milk to the buttercream, alternately until well incorporated.
- In another bowl, beat the egg whites with a pinch of salt until a frothy mixture forms.
- Add the yeast to the dough and then add the egg whites, taking care so that they do not fall apart and thus obtaining a well-aerated dough.
- Transfer the dough into the baking pan, already greased and dusted.
- Place in the preheated oven at 180°C and cook for about 45 minutes.
- After this time, test with a toothpick, insert it into the center of the cake and if it comes out clean, it is ready.
- Remove from the oven, shake the pan slightly to see if the cake loosens.
- Let it cool, in the meantime prepare the topping.
Brigadeiro coverage:
- Mix all the ingredients in a pan (condensed milk, milk, chocolate powder and butter).
- Cook over low heat, stirring to prevent sticking.
- When it starts to thicken, cook a little longer until it reaches a soft point.
- Turn off the heat and let it cool to room temperature.
FINALIZATION AND ASSEMBLY:
- Unmold the brigadeiro cake when it’s cold.
- Spread the brigadeiro icing all over the cake.
- Decorate with chocolate sprinkles on top.
- Transfer to the plate or platter you will serve on.
- The cake can be stored at room temperature.
- Serve sliced.
