Brigadeiro cake: a buttery and moist chocolate dough, with a sweet topping, everyone likes it




The most famous and loved cake by adults and children with brigadeiro topping.

Recipe for 4 people.

cup = 240 ml, spoon = 15 ml, teaspoon = 10 ml, teaspoon = 5 ml

Ingredients for homemade cakes – Basic dough

– 200 g unsalted butter + a little to grease the pan.

– 2 cups of sugar

– 4 units of eggs, separated whites and yolks.

– 1 cup(s) of milk in some variations is replaced by another ingredient (or another ingredient of your choice)

– 3 cups (tea) wheat flour + a little to sprinkle the pan.

– salt to taste (pinch)

– 1 tablespoon(s) of chemical yeast

Chocolate Cake Ingredients (Homemade Cake – variant 9)

– 1 cup(s) of chocolate powder (added to the basic mixture)

– 1 unit of lemon – juice – added to milk.

TOPING BRIGADEIRO ingredients

– 1 can(s) of condensed milk

– 3 tablespoons of milk

– 4 tablespoons of chocolate powder

– 3 tablespoons of unsalted butter

Ingredients TO DECORATE

– chocolate sprinkles to taste

PREPARATION:

  1. A complete recipe for this brigadeiro cake equals 4 portions – use a 23cm baking tray.
  2. Remove the butter from the fridge 1 hour before to bring it to room temperature (ointment point).
  3. Separate the ingredients and utensils for the recipe.
  4. Grease the pan with butter and sprinkle with flour.
  5. Open the eggs and separate the yolks and whites into two bowls.
  6. Sift the flour together with the chocolate powder.
  7. Wash and dry the lemon and squeeze the juice.
  8. Measure the milk into a cup and add the lemon juice.
  9. Preheat the oven to 180°C.

PREPARATION:

Brigadeiro cake:

  1. In a planetary mixer, preferably with a paddle attachment, beat the butter with the sugar until you obtain a whitish cream.
  2. Add the egg yolks, one at a time, and continue beating to combine.
  3. Using a wire whisk, add the flour, chocolate and milk to the buttercream, alternately until well incorporated.
  4. In another bowl, beat the egg whites with a pinch of salt until a frothy mixture forms.
  5. Add the yeast to the dough and then add the egg whites, taking care so that they do not fall apart and thus obtaining a well-aerated dough.
  6. Transfer the dough into the baking pan, already greased and dusted.
  7. Place in the preheated oven at 180°C and cook for about 45 minutes.
  8. After this time, test with a toothpick, insert it into the center of the cake and if it comes out clean, it is ready.
  9. Remove from the oven, shake the pan slightly to see if the cake loosens.
  10. Let it cool, in the meantime prepare the topping.

Brigadeiro coverage:

  1. Mix all the ingredients in a pan (condensed milk, milk, chocolate powder and butter).
  2. Cook over low heat, stirring to prevent sticking.
  3. When it starts to thicken, cook a little longer until it reaches a soft point.
  4. Turn off the heat and let it cool to room temperature.

FINALIZATION AND ASSEMBLY:

  1. Unmold the brigadeiro cake when it’s cold.
  2. Spread the brigadeiro icing all over the cake.
  3. Decorate with chocolate sprinkles on top.
  4. Transfer to the plate or platter you will serve on.
  5. The cake can be stored at room temperature.
  6. Serve sliced.
