PREPARATION:

  1. Separate the recipe ingredients and utensils.

Banana Pancakes:

  1. In a shallow dish or bowl, break the eggs, add the yeast and beat well.
  2. In another shallow plate or bowl, mash the banana well with a fork until no large pieces remain.
  3. Mix the mashed banana and beaten eggs with the baking powder until well incorporated.
  4. Heat a small non-stick pan over medium/low heat to prepare the eggs and brush them with coconut oil.
  5. Pour a portion of mixture (1 ladle or enough to fill the bottom of the pan), reduce the heat to low and cover.
  6. When the dough is firm, turn the pancake: since the dough is a little fragile, invert it onto a dessert plate and put it back in the pan.
  7. Cook for about 1 more minute.
  8. Remove it from the pan and repeat the operation with the rest of the dough.

FINALIZATION AND ASSEMBLY:

  1. Serve the banana pancake immediately with a side dish of your choice (see suggestions).
  2. Finish with agave syrup or honey.
