Ingredients for banana pancake
– 1 unit of large, ripe silver banana. (or dwarf banana)
– 2 units of beaten eggs.
– 1/2 teaspoon(s) of chemical yeast THE

– honey to taste (or agave syrup)

– banana to taste, sliced (optional)
– ground cinnamon to taste (optional) THE

PREPARATION:
- Separate the recipe ingredients and utensils.

Banana Pancakes:
- In a shallow dish or bowl, break the eggs, add the yeast and beat well.
- In another shallow plate or bowl, mash the banana well with a fork until no large pieces remain.
- Mix the mashed banana and beaten eggs with the baking powder until well incorporated.
- Heat a small non-stick pan over medium/low heat to prepare the eggs and brush them with coconut oil.
- Pour a portion of mixture (1 ladle or enough to fill the bottom of the pan), reduce the heat to low and cover.
- When the dough is firm, turn the pancake: since the dough is a little fragile, invert it onto a dessert plate and put it back in the pan.
- Cook for about 1 more minute.
- Remove it from the pan and repeat the operation with the rest of the dough.
FINALIZATION AND ASSEMBLY:
- Serve the banana pancake immediately with a side dish of your choice (see suggestions).
- Finish with agave syrup or honey.
