The best and healthiest rice cake, filled and wheat-free, to use up the week’s leftover rice.

Ingredients for gluten-free stuffed rice cake
– 1 cup(s) cooked rice
– 2 cloves of garlic, chopped
– 1/4 small onion(s), chopped.
– pepper to taste (optional) THE
– Salt to taste
– 2 units of eggs
– chopped parsley to taste
– green onion chopped to taste
– 2 tablespoons toasted cassava flour – fine (or ready-made cassava flour of your choice)
– olive oil to taste for binding (if necessary) (optional)
– 2 tablespoons of grated parmesan
– 1 teaspoon(s) of chemical yeast THE
– oil to taste, a zigzag drizzle on each cupcake.
Ingredients for the filling
– 75 g of mozzarella, diced. (or semi-mature cheese)
Ingredients FOR GLUTEN-FREE BREADING
– 1/2 cup(s) toasted cassava flour, fine or ready-made cassava flour, or enough for breading
– 25 g of grated parmesan.

PREPARATION:
- Separate all ingredients and utensils for the recipe.
- This recipe yields approximately 5-6 large dumplings per 2 servings.
- Preheat the oven to 240°C – very high temperature.
- Use leftover rice. To prepare these dumplings, use whole, unprocessed rice.
- Grate the parmesan, if you haven’t bought it grated, just enough for the cupcake and the breading).
- Chop the onion, parsley, chives and garlic.
- Cut the mozzarella or semi-hard cheese into 1.5cm x 1.5cm cubes and set aside.
- Prepare the mixture for the breading: place the finely toasted cassava flour or cassava farofa in a bowl, mix with the grated cheese and paprika.
PREPARATION:
Stuffed rice cake:
- In a bowl, mix the brown rice, without processing it, with the other ingredients of the recipe. The dough must be consistent and completely covered by the eggs.
- If necessary, add olive oil slowly, just enough to bind.
- Check that the mixture is homogeneous, with all the grains united and not dissolved.
- Form the ravioli with a dessert spoon: 1 and a half spoons per ravioli.
- First, place 1 dessert spoon of the dough in your hands and roll it out to form a disk.
- Place 1 piece of diced cheese in the center.
- Close with ½ spoonful of rice and form a ball.
Stuffed rice cake:
- Bread the gnocchi in the flour or cassava farofa mixture.
- Place them on a baking tray greased with a drizzle of oil or non-stick.
- Make a zigzag with the oil, a drizzle, on each cupcake.
Stuffed and BAKED Rice Cake:
- Bake in a preheated oven at 240°C until golden.
- If necessary, turn them halfway through cooking to obtain uniform browning, which varies depending on the oven.
- Once golden, turn off and remove from the oven.
- Drain well on absorbent paper.
FINALIZATION AND ASSEMBLY:
- Arrange the stuffed, gluten-free and non-fried rice balls on a serving platter, or if you prefer, distribute them on plates, next to your main course.
- Gnocchi goes very well with a variety of dishes and can also be served as an appetizer or snack.
