Super practical and economical potato omelette with 3 ingredients + simple and economical condiments, for a practical meal
Potato omelette: a dish that is a meal – with potatoes cooked in the oven, it is more practical.
Recipe for 2 people.

POTATO OMELETTE Ingredients
– 400 g of potatoes
– 5 units of eggs
– 2 tablespoons of milk
– Salt to taste
– pepper to taste B
– olive oil to taste
PREPARATION:
- Preheat the oven to 180°C.
- Separate the ingredients and utensils for the recipe.
- For 2 people, use a 23cm non-stick frying pan and 1 frying pan.
- During cooking, the potatoes may overlap slightly, but if the quantity is greater, increase the number of trays so that they cook evenly and divide the preparation into 1 or more trays.
- Start by placing the potatoes in the oven (see preparation).
PREPARATION:
Baked potatoes:
- Grease one or more baking trays with a drizzle of olive oil.
- Wash the potatoes.
- Cut the potatoes into thin slices of about 5 mm, preferably with a mandolin, so that the thickness is uniform.
- Arrange the potato slices on the baking trays, add salt, pepper and drizzle with a little more olive oil.
- Mix well so that all the potatoes are seasoned and evenly distributed on the baking tray(s).
- Place in the preheated oven at 180°C and bake for 30-35 minutes or until lightly golden.
- Halfway through the time, if necessary, turn the pan and potatoes.
Potato omelette (do this step while the potatoes are roasting):
- In a bowl, beat the eggs, just enough to mix the yolks and whites.
- Add the milk, season with salt and pepper.
- When the potato is cooked and golden, remove it from the oven.
- Transfer the slices to a non-stick pan, distributing them until the entire bottom is filled.
- Add the beaten eggs, shaking the pan slightly so that they occupy all the space between the slices.
- Cover and place over a low heat – during cooking, raise the sides slightly to allow the egg to expand better and speed up cooking.
- When the eggs have solidified on top, turn the omelette, using a cutting board.
- Continue on low heat for another 2-5 minutes, depending on your preferred cooking.
- Remove from heat.
FINALIZATION AND ASSEMBLY:
- Download the potato omelette on a serving plate or, if you prefer, divide it into slices and serve directly on plates.
- Accompany with a dressed salad (optional).
