Pasta Day: 7 recipes to enjoy during the appointment

Delicious pasta recipes and the habit of gesticulating exaggeratedly in every conversation are Italian legacies that many Brazilians carry with pride! Heritage is remembered in Sunday pasta and surnames and, to bring together so much memory in a single event, how about celebrating the Pasta day?
Yes, it exists! The event was created in 1995 on the occasion of the World Pasta Congress, which took place in Rome and brought together the world’s main pasta makers. Since then, October 25th has been dedicated to celebrating Macaroni Day!

Creamy Bolognese pasta

Ingredients:

  • 1 tablespoon of oil
  • 1 cup chopped bacon
  • 300 g of minced meat
  • 1 onion chopped
  • 2 chopped tomatoes
  • 3 cups of hot water
  • 1 cube of meat broth
  • 1 pack of screw noodles (500 g)
  • Salt to taste
  • 1/3 cup basil leaves
  • 1 jar of cream cheese (200 g)
  • 2 cups diced provolone

Preparation method:

  1. Place a pressure cooker over medium heat with the oil and brown the bacon and minced meat for 3 minutes.
  2. Add the onion and tomato and sauté for 2 minutes.
  3. Add the tomato sauce, the water with the dissolved broth, the pasta and the salt.
  4. Cover the pan and cook for 3 minutes from when the pressure starts.
  5. Turn off, let the pressure release and open the pan.
  6. Add the basil, ricotta, provolone and mix.
  7. Transfer to a refractory dish and serve.

Ingredients:

  • 1 1/2 cups fresh basil leaves, washed and dried
  • 1/3 cup (tea) olive oil
  • 1 small clove of garlic, diced
  • 4 tablespoons pine nuts, Brazil nuts or cashews
  • 4 tablespoons of grated pecorino or parmesan
  • 1 teaspoon of salt
  • 1 pack of spaghetti cooked al dente and drained (500g)
  • Grated Parmesan for sprinkling

Preparation method:

  1. Blend the basil, olive oil, garlic, pine nuts, cheese and salt in a blender until smooth.
  2. Drain the pasta, set aside the cooking water and pour it into a serving dish. Drizzle with the sauce.
  3. Clean the wall of the blender with about 1 ladle of the reserved cooking water, blend it and pour it over the pasta.
  4. Mix, sprinkle with Parmesan and serve.

Ingredients:

  • 1 pack of bow tie noodles (500 g)
  • Freshly grated parmesan to taste

Sauce

  • 4 tablespoons butter
  • 1 onion chopped
  • 3 tablespoons of wheat flour
  • 3 cups milk (tea)
  • 1 cup canned peas, drained
  • 2 cups ham (cubed)
  • 1 cup cream (tea).
  • Salt and grated nutmeg to taste

Preparation method:

  1. First we start with the sauce, melt the butter in a pan over medium heat and brown the onion for 4 minutes.
  2. Then sprinkle with flour and fry for 2 minutes.
  3. Then add the milk and mix until it thickens.
  4. Add the peas, ham, cream, season with salt and nutmeg and cook for another 2 minutes.
  5. Turn off and set aside.
  6. Cook the pasta according to the instructions on the package and add it to the sauce.
  7. Transfer to a large baking dish, sprinkle with parmesan and serve.

Ingredients:

  • 1/2 pack of pens (250g)
  • Salt to taste
  • 3 tablespoons butter
  • 1/2 onion chopped
  • 1 cup chopped ham
  • 1 can of drained peas
  • 1 can drained green corn
  • 1/2 cup chopped olives
  • 1 can of tomato sauce (340g)
  • 1 pack of cream (200 g)
  • 1/2 cup chopped green chili pepper
  • Salt and black pepper to taste
  • 100 g of grated parmesan

Preparation method:

  1. In a pan, over medium heat, cook the pasta in plenty of salted water, leaving it al dente
  2. Drain and reserve
  3. In the meantime, heat a pan with the butter over medium heat and quickly fry the onion.
  4. Add the ham, peas, corn, olives and fry for another 2 minutes
  5. Add the tomato sauce and cook for 5 minutes
  6. Add the cream, the green chilli, season with salt and pepper and mix
  7. Pour the cooked pasta into the pan, stir, sprinkle with parmesan and then serve in the pan.

  • 4 tablespoons of olive oil
  • 2 cloves garlic, minced
  • 1 bunch ninja broccoli florets
  • 2 cans of solid tuna, drained
  • 1 pack of cooked and drained penne (500g)
  • Salt to taste

Preparation method:

  1. Heat the olive oil, quickly brown the garlic, add the broccoli and cook for 5 minutes or until tender.
  2. Then add the tuna, mix delicately and season with salt.
  3. Arrange the pasta on a serving plate, cover with the sauce and serve.

Pasta carbonara au gratin

Ingredients:

  • 1 pack of pens (500g)
  • Salt, black pepper and grated nutmeg to taste
  • 200 g diced bacon
  • 3 egg yolks
  • 4 tablespoons grated parmesan
  • 4 tablespoons of breadcrumbs

Preparation method:

  1. Cook the pasta in boiling salted water for the time indicated on the package or until al dente and drain.
  2. In the meantime, in a pan, brown the bacon in its own fat, over medium heat, stirring until golden.
  3. Drain on absorbent paper.
  4. Mix the pasta, bacon, cream mixed with egg yolks, salt, pepper and nutmeg.
  5. Mix and pour into a medium baking dish.
  6. Sprinkle with cheese and flour and place in a high, preheated oven for 10 minutes.
  7. Serve immediately.

  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 500 g seedless tomatoes, cut in half
  • Salt to taste
  • 1/2 teaspoon crushed red chili pepper
  • 1 pack of spaghetti (500g)
  • 2 bunches of chopped rocket

Preparation method:

  1. In a pan, over medium heat, heat the olive oil and fry the garlic until golden brown.
  2. Add the cherry tomatoes, salt, pepper and cook for 15 minutes
  3. In the meantime, mix occasionally
  4. Remove from heat and set aside
  5. Cook the pasta according to the package instructions and then drain.
  6. Add the rocket, mix and transfer to a plate
  7. Cover with the sauce and serve immediately.
