Sweet Cornbread Recipe:

Preparation time: 1h (+1h rest)

Ingredients:

  • 1/2 cup (tea) oil
  • 1 can green corn (reserve canned water)
  • 6 tablespoons of sugar
  • 1/2 tablespoon salt
  • 1 cup (tea) water
  • 2 eggs
  • 1/2 cup (tea) cornmeal
  • 2 1/2 cups (tea) wheat flour (approximately)
  • Margarine and wheat flour for greasing and flouring

Syrup

  • 1 cup (tea) powdered sugar
  • 3 tablespoons of water

Preparation method:

  1. Blend the oil, corn with water, yeast, sugar, salt, water and eggs in a blender for 1 minute.
  2. Pour it into a bowl, add the corn flour and wheat flour, little at a time, kneading until it no longer sticks to your hands. If necessary, add more flour.
  3. Cover and let rest for 20 minutes.
  4. Divide the dough into 2 parts, form two cylinders and place each in a greased and floured English cake tin.
  5. Cover and let rest for another 40 minutes.
  6. Bake in a preheated medium oven (180°C) for 30 minutes or until cooked through and lightly browned.
  7. Remove from the oven, let cool and unmold.
  8. Mix the syrup ingredients until they have dissolved, sprinkle the bread and serve.
