Consumed since colonial times, it became popular especially in the Minas Gerais region, but soon conquered the entire country and acquired several delicious versions. Simple crackling

  • 1kg of pork belly chopped
  • Salt to taste
  • Fry oil

Preparation method

Place the chopped pork rinds in a container and season with salt. Then transfer to a large, high pan and add the oil until all the cracklings are covered. Place on high heat, stir, cover the pan and leave to fry. When it stops popping, open the pan and check if the cracklings are as browned as you like. Remove from the heat, transfer to a container with the help of a slotted spoon and serve immediately.

Crackling roll

  • 2 kg of pork belly
  • 5 crushed garlic cloves
  • 1 tablespoon of spicy paprika
  • 1/2 cup lemon juice
  • 1/2 cup olive oil
  • Salt and ground black pepper to taste
  • Rope for tying
  • Fry oil

Preparation method

Place the pork belly in a container and season with salt, garlic, paprika, black pepper, lemon and olive oil. Roll up and tie well with the help of string. Place in a mold and place in a preheated oven at 190°C for 2 hours. Remove from the oven and leave to rest for 40 minutes. Then refrigerate for 4 hours.

Then, remove the string and cut the cracklings into slices. Reserve. In a pan, add the oil and place over medium heat to heat. Fry the crackling slices until golden brown. Repeat the operation with all the slices and then serve.

  • 240 ml of hot milk
  • 120 ml of oil
  • 3 eggs
  • 240 ml of water at room temperature
  • 1 tablespoon margarine
  • 1 level tablespoon of sugar
  • 1 tablespoon of salt
  • 1.2 kg of wheat flour
  • 50 g of organic yeast
  • 250g very dry pork rinds
  • Greasing oil

Preparation method

Place the milk, water, oil, eggs, margarine, sugar, salt and yeast in a blender and blend for 5 minutes. Transfer to a container and gradually add the wheat flour, mixing until you obtain a smooth mixture. Knead well and divide the dough into three parts. Put a little crackle on each part. Then form each part into a ball and let the bread rest for 20 minutes.

Grease a baking tray with oil, give shape to the loaves and place it on the baking tray. With a knife make small cuts on the bread. Place in the preheated oven at medium temperature for 30 minutes. Remove from the oven, wait for it to cool and then serve.
