Coconut and pineapple delight recipe

Ingredients:
- 7 tablespoons of corn starch
- 3 1/2 cups milk
- 1 can of condensed milk
- 1 glass of coconut milk (200 ml)
- 3/4 cup (tea) sugar
- 1 cup chopped pineapple in syrup
Syrup
- 1/3 cup (tea) sugar
- 1/2 cup (tea) water
- 1/2 cup (tea) corn glucose
- 1 cup chopped pineapple in syrup
Preparation method:
- In a pan, over low heat, dissolve the cornstarch in the milk, add the condensed milk, coconut milk, grated coconut, sugar and mix until it thickens.
- Remove from the heat and add the pineapple. Pour into a large, moistened mold with a hole in the centre.
- Store in the refrigerator for 2 hours.
- For the syrup, in a pan, over medium heat, add the sugar, water, glucose and stir until lightly browned.
- Add the pineapple, mix and turn off the heat. Let cool.
- Remove the dish from the refrigerator, turn it out and cover it with the cold syrup.
- Serve immediately.
