cup = 240 ml, spoon = 15 ml, teaspoon = 10 ml, teaspoon = 5 ml
Ingredients SPINACH PESTO SAUCE
– 1/2 bunch of sanitized spinach, preferably organic, only the leaves
– 1/4 teaspoon walnuts (or unsalted toasted cashews)
– 1/2 clove of garlic, peeled and chopped (optional)
– 2 tablespoons of parmesan
– 1/2 cup(s) of extra virgin olive oil
– Salt to taste
– pepper to taste THE
PREPARATION:
- If you want to make the sauce for canning, boil the water and sterilize the glass jars and lids (filling them with boiling water for 5-10 minutes).
- Wash the spinach under running water, peel them and remove the stem. Leave to soak in the sodium hypochlorite solution for 15 minutes.
- Set aside the other ingredients and utensils for the recipe.
- Coarsely chop the walnuts or cashews.
- If you don’t buy grated cheese, grate it preferably on the fine side of the grater.
- Wash and peel the garlic (optional) and chop it.
- Drain, wash again and dry the spinach leaves with a salad spinner.
PREPARATION:
Spinach pesto sauce:
- Place nuts in a blender, food processor, or bowl using a blender, blend to blend.
- Then add the other ingredients of the sauce (cleaned and dried spinach, chopped garlic (optional), grated cheese, extra virgin olive oil, salt and pepper).
- Beat, in pulses, until the spinach is cut into micro pieces and the mixture is very green.
- Adjust the seasoning: salt and pepper.
FINALIZATION AND ASSEMBLY:
- Store the spinach pesto in the sterilized jar(s) in the refrigerator for up to 3 days or use immediately.
- Serve the pesto over a pasta of your choice or as a complement to meat, poultry or fish and to dress a salad.
