All you need to do is wash it to remove the salt and then place the cod in a container covered with ice water, closed with a lid and stored in the refrigerator. Every six hours change the cod water until the amount of salt is to your liking.

Grilled cod with mashed potatoes recipe

Ingredients:
- 4 desalted cod fillets
- 1 cup milk (tea)
- 1 kg of whole small potatoes
- 2 cups cooked broccoli florets
- 1 cup and 1/2 cup (tea) olive oil
- 5 sliced garlic cloves
- 1 teaspoon chopped parsley
- 1 teaspoon chopped basil
- 1 cup black olives
- Olive oil for seasoning
Preparation method:
- Place the cod fillets in a pan, pour in the milk, cover with water and cook over low heat for 10 minutes. Drain and reserve.
- Place the potatoes in a mold, drizzle with olive oil, sprinkle with coarse salt, cover with aluminum foil and place in a preheated medium oven for 30 minutes.
- Remove the aluminum foil and let it cool. In a non-stick pan equipped with a grill, over a high heat, heat a drizzle of olive oil and grill the cod fillets.
- Place the cod in a medium pan and arrange the broccoli around it. Give each potato a light punch so that it opens slightly and distribute it around the loins.
- Sprinkle more coarse salt over the broccoli and potatoes, drizzle with olive oil and place in a preheated medium oven for 30 minutes.
- Heat the olive oil over low heat and lightly brown the garlic. Let it cool and add the parsley and basil.
- Remove the cod from the oven, arrange the black olives between the potatoes and broccoli, drizzle with garlic oil and serve immediately.
