Christmas, 40 degrees: chefs prepare dinner only with recipes that don’t go in the oven


Given that the heat promises to be inexorable at the end of the year, how about avoiding classic roasts so as not to overheat your kitchen even more?




The weather forecast warns: this year we will face a Christmas with temperatures above – or much above – the standards. No one can stand the heat, not even the summer-loving team.

In this context, when we began to think about special items at the end of the year, it was terrifying just to think about preparing the Christmas roasts. Imagine preparing the other dishes for Christmas dinner next to the oven that roasts the turkey!

This is why we launched the challenge: a complete dinner, with starter, main course and dessert, only with recipes that do not require cooking in the oven. Cooking on the stove was allowed, but if it could be avoided, even better. Difficult task, right?! But chefs Marcos Carioba, of the Do Alto rotisserie, and Patricia Helú, of the Caracolla restaurant, solved the problem without major complications.

The menus proposed by each chef have different approaches. Carioba has not given up on the classics, so it has invested in tender meat, which comes from the smoked market and does not require additional cooking. To enhance the flavor, the chef marinated the meat for 12 hours and served it with fig mustard and salsa verde.

Patricia Helú did something different: she followed the line of her restaurant and created a 100% vegan dinner, but with terrine, salpicão and walnut ice cream.
