Christmas seitan

ingredients

  • 500 g of wheat flour
  • 1 1/2 cups water
  • 1 onion peeled and chopped
  • 3 cloves of garlic, peeled and crushed
  • Salt, soy sauce, green chilli and ground black pepper to taste
  • Water for soaking

Preparation method

Place the wheat flour and water in a container and mix until you obtain a smooth consistency. Model mass form a ball, cover with water and leave to macerate for 8 hours. Then wash the mixture under running water until the water starts to run clear. Let the dough dry, shape it as you prefer and secure it with string.

Transfer the seitan to a pressure cooker, add the soy sauce, salt, green chilli, black pepper, onion, garlic and place over medium heat. Cook for 20 minutes after coming to pressure. Next, turn off the heat and wait for the pressure to release. Then transfer the seitan to a plate and place in a preheated oven at medium temperature until golden brown. Serve immediately.

Cassava cream

  • 400 g of peeled cassava
  • 1/2 cup tea oatmeal
  • 1 teaspoon of salt
  • 2 cloves of garlic, peeled and chopped
  • 1/2 cup chopped onion
  • 2 1/2 cups water
  • Water for cooking cassava
  • Olive oil to taste

Filling

  • 3 cloves of garlic, peeled and chopped
  • 1/2 cup chopped onion
  • 1 1/2 cups hydrated textured soy protein
  • 1 tablespoon lemon juice
  • 1 teaspoon oregano
  • 1 pinch of cumin
  • 2 tablespoons of tomato sauce
  • Olive oil to taste
  • 1/2 cup crushed green chili tea
  • Oregano for sprinkling

Preparation method

Cassava cream

In a pressure cooker, place cassava, cover with water and place over medium heat. Cook for 10 minutes after starting the pressure. Turn off the heat, wait for the pressure to release, drain the water, mash the cassava into a container and set aside. Place the oats and water in a blender and leave to rest for 30 minutes. Then add the salt, the cassava kept aside and beat until you obtain a uniform cream. Reserve. In a pan, add the olive oil and place over medium heat to heat. Add the onion, garlic and brown. Add the cassava cream and cook for 10 minutes, stirring constantly. Season with salt and set aside.

Filling

In a pan, add the olive oil and place over medium heat to heat. Add the garlic, onion and brown. Add soy protein, lemon juice, salt and sauté for 5 minutes. Season with oregano and cumin. Add the tomato sauce, green chilli and mix well. Turn off the heat and set aside.

Assembly

Place a layer of cassava cream on a serving plate, cover with the filling and spread with the help of a spoon. Finish with another layer of cassava cream, sprinkle with oregano and place in the oven for 5 minutes to grill. Remove from the oven and serve immediately.

Mushroom and pumpkin risotto

ingredients

  • 2 cups arborio rice
  • 1 pumpkin cut into cubes
  • 200 g mixed mushrooms (shiitake, shimeji, Parisian mushrooms) and sliced
  • 1 onion chopped
  • 3 cloves garlic, minced
  • 4 tablespoons of olive oil
  • 1 glass of vegan dry white wine
  • 4 cups hot homemade vegetable broth
  • Salt and ground black pepper to taste
  • 1/2 cup toasted and chopped cashews
  • Fresh parsley for garnish

Preparation method

In a large skillet, add 2 tablespoons of olive oil and heat over low heat. Add the onion and garlic and sauté until golden brown. Add the arborio rice and stir for 3 minutes. Pour the white wine into the pan and stir continuously until the liquid has dried. Add the pumpkin cubes and mix well. Pour in the hot vegetable broth, one ladle at a time, stirring constantly and waiting for the liquid to be absorbed before adding more.

In a separate pan, heat the remaining olive oil and sauté the mushrooms until golden brown. When the rice is almost ready, add the mushrooms to the pan and mix gently. Season the risotto with salt and black pepper and garnish with chopped cashews and parsley. Serve immediately.

ingredients

  • 3 cloves of garlic, peeled and crushed
  • 1 cup chopped onion
  • 1 cup cooked lentils
  • 1 pinch of salt
  • 1 cup of tea rice
  • 3 teacups of water
  • 1 cup crushed green chili tea
  • 4 green peppers
  • 2 carrots, peeled and chopped
  • Olive oil to taste

Preparation method

In a pan, add the olive oil and place over medium heat to heat. Add the onion, garlic and brown. Add the lentils, salt and sauté for 5 minutes. Add the rice, carrot and water. Reduce the heat and cook until the water dries up. Turn off the heat, add the green chilli and mix well. Reserve. Cut the top part of the peppers, remove the seeds and, using a spoon, add the filling. Close the peppers, place them in a mold, drizzle with olive oil and place in a preheated oven at 180°C for 30 minutes. Turn off the oven and serve immediately.

ingredients

  • 500 g of cassava flour
  • 5 tablespoons of olive oil
  • 1 onion peeled and chopped
  • 1/2 cup tea raisins black without seeds
  • 3 tablespoons chopped walnuts
  • 1/2 cup diced green apple
  • 2 tablespoons chopped parsley

Preparation method

In a pan, add the olive oil and place over medium heat to heat. Add the onion and brown it. Turn off the heat, wait for it to cool, add the raisins, apples, nuts, parsley and mix well. Gradually add the flour and mix until combined with the other ingredients. Serve immediately.
