A typical French dessert, profiteroles conquered the world. Here in Brazil it is better known as carolina, where it is typically found in bakeries. But before being brought here by Ukrainian immigrants, the original dessert was reportedly created at the request of the French court in the 19th century. XVI.
At first the profiterole was prepared with baked pasta. filled with ice cream and topped with chocolate. However, over time, it ended up changing, like all good recipes. After all, our Carolina is a little different, isn’t it? It’s still a delicious treat!

Profiteroles
Time: 2 hours

Ingredients:
- 1 cup (tea) water
- 1/2 cup butter (tea).
- 1 cup (tea) wheat flour
- 4 eggs
Filling
- 500 ml ice cream
Roof
- 200g chopped semi-sweet chocolate

Preparation method:
- In a pan, place the water and butter over medium heat and bring to a boil.
- In the meantime, add the flour all at once and mix until it no longer sticks to the bottom of the pan.
- Transfer it to a bowl, let it cool and add the eggs, one at a time, stirring constantly.
- Place it in a piping bag with a large round nozzle and form profiteroles on a greased baking tray.
- Bake in a preheated medium oven for 15 minutes or until golden brown.
- Afterwards, let it cool
- Melt the chocolate in a bain-marie and set aside
- Cut the side part of the profiteroles, fill them with ice cream, arrange them on a plate and sprinkle them with melted chocolate
- Serve immediately.
