Yakisoba without pasta, with zucchini, is low in carbohydrates and very delicious, second only to the traditional one in terms of calories
A very popular oriental dish in a low carb version.

Chicken ingredients
– 250 g of chicken breast, cut into cubes
– 1/2 unit of lemon
– 1 unit of ginger (about 3 cm each), grated
– 1 spoon(s) of cachaça
– Salt to taste
– pepper to taste D
Ingredients for courgette Yakisoba
– 2 tablespoons of olive oil
– 1 tablespoon(s) of sesame oil
– 1/2 onion(s), small, chopped
– 2 cloves of garlic, chopped
– 1 cup(s) carrot, diced
– 2 pieces of courgettes cut into spaghetti
– 1 cup(s) fresh broccoli (florets), blanched
– 1/2 cup(s) gluten-free soy sauce
– salt to taste (optional)
– pepper to taste D
Ingredients for decorating
– 2 units of biquinho peppers, cut into 6 parts each
PREPARATION:
1. Bring a pot of water to boil to cook the broccoli. Don’t cook them yet, follow the pre-preparation.
2. Cut and season the chicken and then cook the broccoli (see preparation).
3. Wash, peel and cut the carrot into cubes. Peel and chop the garlic and onion.
4. Wash the courgettes very well and grate, with the peel, on the thick part of the grater, lengthwise (discard the core with the seeds).
5. Finishing: clean the biquinho peppers and cut them into 6 parts.
6. Separate the other ingredients and utensils for the recipe.
PREPARATION:
Chicken (this step must be performed before continuing the preparation):
1. Place the chicken breast on a cutting board and cut it into cubes of approximately 3 cm.
2. Transfer to a sieve, squeeze the lemon over the chicken cubes and mix well.
3. Wash under running water and dry with absorbent paper.
4. Grate the ginger.
5. Place it in a bowl and season it with grated ginger, cachaça and pepper – add a little salt if necessary, because the sauce contains soy sauce, which is quite salty.
6. Set aside.
7. Next, cook the broccoli florets (see preparation).
Broccoli – Blanch: (this step must be done during pre-preparation)
1. Separate and wash the broccoli florets.
2. When the water boils, salt it and add the broccoli florets.
3. Cook for 2 minutes, just enough to make it al dente.
4. Using a slotted spoon, transfer the florets to a bowl of ice water to stop the cooking.
5. Drain and reserve.
6. Continue pre-preparation.
APPETITE OR DESSERT (optional):
If you have chosen to prepare an appetizer or dessert, take the time necessary to prepare it, as this recipe does not require an interval.
Zucchini Yakisoba:
1. In a wok or large, deep pan, heat the olive oil with the sesame oil.
2. When it is hot, brown the chicken cubes, turning them until the entire surface is golden.
3. Remove the chicken and store on a serving platter or baking sheet.
4. In the same pan or wok, brown the onion until it is transparent and then the garlic, without browning.
5. Add the carrot cubes, lower the heat and brown for about 2 minutes.
6. Return the chicken to the pan and add the zucchini noodles and broccoli florets.
7. Fry for another 2 minutes so that the vegetables absorb the flavor of the seasonings.
8. Season with soy sauce, taste and season with salt and pepper. Turn off the fire.
FINALIZATION AND ASSEMBLY:
1. Arrange the courgette yakissoba on a serving plate or, if you prefer, divide it into individual bowls or soup plates.
2. Decorate with chopped biquinho peppers.
