Pair the cheeses with the wine
You cheeses They can be organized in various ways, whether by origin, type of milk, country of production or consistency. Among these, the last criterion is one of the ways to guarantee a good dish of this food, which brings with it different consistencies and intensities of flavor. Here’s how to distinguish the options:
1. Soft cheeses
- Brie: soft and creamy, has a thin shell and a soft interior. It has a delicate flavor and should be served at room temperature. The cut is made from the edge to the center of the piece;
- Camembert: very similar to brie, it is also soft and creamy. It has less fat in its composition;
- Goat’s cheese: with a strong flavour, slightly acidic and with earthy notes.
To harmonize, opt for white wines such as Tierra del Mar Sauvignon Blanc 2023 or Portada Winemaker’s Selection White 2022 and a light red such as Père Guillot Pinot Noir Pays d’Oc PGI 2022.

2. Semi-hard cheeses
- Emmental: slightly sweet, with a nutty flavour;
- Gouda: delicate and fruity;
- Provolone: has a smoked aroma and flavour;
- Rennet: white paste, slightly salty and slightly acidic, ideal for roasting.

3. Hard cheeses
- Parmesan: a classic cheese to enjoy with wine. It is hard, very salty and reveals fruity notes;
- Pecorino: made with sheep’s milk, it is also salty and has a spicy touch;
- Grana Padano: aromatic, has a grainy texture and a slightly sweet flavour.

Therefore, it is essential to choose wines which have a high level of acidity, whether they are red or white. White wines tend to pair better with cheeses precisely because they have a good level of acidity and fruity flavors,” he concludes.
