- 1/2 cup wheat flour
- 1 tablespoon olive oil
- 3 tablespoons of water
- 100 g of chicken pieces, sautéed in tomato sauce
- Pulp of 1 avocado dice
- 1 onion peeled and cut into cubes
- 1 seedless tomato chopped
- Salt and coriander to taste
- Wholemeal flour for dusting
- Greasing oil
Preparation method
Place the wholemeal flour, olive oil, salt and water in a container and mix until you obtain a smooth mixture. Then flour a smooth surface with wheat flour, divide the dough into three equal parts and, with the help of a rolling pin, roll it out to form a circle. Reserve.
Grease a pan with olive oil and place over medium heat to heat. Arrange the discs on top, one at a time, and cook until it starts to boil. Turn carefully to brown the other side and turn off the heat. Then, using a spoon, fill the pastry with chicken, tomato, onion, cilantro and avocado. Fold in half, season with salt and serve immediately.

ingredients
- 1 breast of chicken without bones
- 250 g of ricotta cream
- 1 onion peeled and chopped
- Salt and ground black pepper to taste
- Water for cooking
Preparation method
Place the chicken in a pan, cover with water, salt and cook over medium heat for 20 minutes. Next, turn off the heat, drain the water and shred the chicken. Transfer to the blender, add the rest of the ingredients and blend until you get a paste. Serve immediately.

ingredients
- 150g boneless chicken breast, cooked and chopped
- 1 bunch lettuce leaves, washed
- 1 purple cabbage wash and cut into strips
- Wedges of 1 mandarin
- 1 carrot peeled and grated
- 1 tablespoon sesame seeds
- 1 lemon juice
- Salt and ground black pepper to taste
Preparation method
In a container, place the chicken and season with salt and black pepper. Add the lettuce leaves, cabbage, carrot, mandarin segments and lemon juice. Mix well, season with salt, sprinkle with sesame seeds and serve immediately.
Eggplant stuffed with shredded chicken
ingredients
- 1 eggplant
- 150g boneless chicken breast, cooked and chopped
- 1 onion peeled and chopped
- 1 seedless red pepper, chopped
- 1 seedless tomato chopped
- 1 tablespoon tomato sauce
- Salt, olive oil and ground black pepper to taste
- Greasing oil
Preparation method
Under running water, wash the aubergines and, using a knife, cut them in half, lengthwise. Remove the brain, chop it and set the vegetables and chopped brain aside. In a pan, add the olive oil and place over medium heat to heat. Add the onion and brown it. Add the chicken and cook until browned. Add the pepper, the tomato, the aubergine core, the tomato sauce, salt and black pepper and cook until the water released by the vegetables has dried. Turn off the heat, wait for it to cool and, using a spoon, stuff the aubergines. Then place the vegetables on a baking tray greased with olive oil and place in a preheated oven at 180ºC for 20 minutes. Serve immediately.
