  • 2 eggs
  • 2 tablespoons of olive oil
  • 10 tablespoons of wheat flour
  • 1 tablespoon of chemical yeast
  • 1/2 peeled and chopped onion
  • Oregano, salt and ground black pepper to taste
  • Fry oil

Preparation method

In a pan, add the olive oil and place over medium heat to heat. Add the onion and brown it. Add the leaves, stems, oregano, salt and black pepper and brown well. Turn off the heat and set aside. Place the eggs in a container, beat them well and mix them with the wheat flour. Add the reserved stew and, lastly, the chemical yeast, mixing lightly.

In a pan, add the oil and place over medium heat to heat. With the help of a spoon, take some dough, form a small parcel and fry it in a pan. Repeat the process with the whole pasta. Then place the gnocchi in a container with absorbent paper to drain the excess oil and serve.

Tip: The leaves and stems used in the preparation can be chard, cabbage, spinach, carrots, broccoli, turnips or any other vegetable of your choice.

ingredients

  • 2 cups cauliflower leaf herbal tea
  • 2 tablespoons of olive oil
  • 2 tablespoons grated mozzarella
  • 1 teaspoon of salt
  • Margarine for greasing

Preparation method

Under running water, wash the leaves, drain them and cut them into strips. Reserve. In a pan, add the olive oil and place over medium heat to heat. Add the leaves and salt and brown for 2 minutes. Turn off the heat and set aside. Then grease a baking tray with margarine and place the stew on it. Sprinkle with parmesan and bake in a preheated oven at medium temperature for 10 minutes. Serve immediately.

Assembly

Preparation method

Pasta

Place the wheat flour, salt and water in a container and mix until you obtain a smooth consistency. Cover with cling film and place in the fridge to rest for 30 minutes. Then flour a smooth surface with wheat flour, place the dough on it and, with the help of a rolling pin, roll it out, giving it a rectangular shape. Place the butter in the center of the dough, fold the sides towards the center and roll it out again with the help of a rolling pin. Repeat the process 3 times to obtain a puff pastry. Reserve.

Filling

In a pan, add the oil and place over medium heat to heat. Add the garlic, onion and pepper and sauté until golden brown. Add the peels, the stem spinach add salt and brown for 10 minutes. Turn off the heat and set aside.

Assembly

Divide the dough into two equal parts and roll it out with the help of a rolling pin. Reserve. Grease a baking pan with a removable base with butter and flour it with wheat flour, place half the dough on top, fill it, cover with the rest of the dough and brush with the egg yolk. Bake in a preheated oven at 200ºC until golden brown. Serve immediately.

  • 3 chayote shells
  • 1 onion peeled and chopped
  • 1 seedless tomato chopped
  • Olive oil, chopped green chili pepper and salt to taste

Preparation method

Wash the peels well under running water and cut them into small pieces. Reserve. In a pan, add the olive oil and place over medium heat to heat. Add the onion and tomato and sauté until the onions are translucent. Add the peels and brown a little more. Finally add the green perfume and salt, mix well and turn off the heat. Serve immediately.
