  • 1/3 cup water

Preparation method

Syrup

Put everything in a pan ingredients and cook over low heat for about 5 minutes, stirring constantly. Once you have a thick syrup, remove it from the heat and wait for it to cool.

Mousse

Place all the ingredients in a blender and blend until you obtain a smooth mixture. Transfer to bowls and place in the freezer for 4 hours. Remove from the freezer, cover with the cold syrup and serve immediately.

  • 50 ml of milk

Preparation method

On a mixer, beat all the ingredients until you obtain a creamy mixture. Transfer the ice cream into a container and place in the freezer for about 40 minutes. Serve immediately.

  • 48g unflavoured gelatine powder
  • 500 ml of milk
  • 200 g of milk cream fresh
  • 200ml coconut milk
  • 100g freshly grated coconut
  • 1 tablespoon of sugar

Preparation method

In a container, hydrate the gelatin according to the manufacturer’s directions. Place the milk, cream, coconut milk, grated coconut, sugar and hydrated gelatin in a blender. So beat until you get a homogeneous cream. Distribute into individual containers and store in the refrigerator for about 2 hours. Serve immediately.

Roasted Fruit

ingredients

  • 2 apples, seeded and peeled
  • 2 pears deseeded and cut with peel
  • 250 g of pineapple cut into cubes
  • 2 silver bananas cut into thick slices
  • 50 g of raisins
  • 2 tablespoons unsalted margarine
  • 50 g of Brown sugar

Preparation method

Place all the fruit on a baking tray and set aside. In a pan, melt the margarine over low heat and mix it with the brown sugar until you obtain a smooth mixture. Cover the fruit with this mixture and place it in a preheated oven at 200ºC for about 30 minutes. Wait for it to cool and then serve.

  • 1 papaya peeled and seeded
  • 300 g of soft ice cream
  • cassis liqueur to taste

Preparation method

Chop the papaya, put it in a container and place it in the freezer for 40 minutes. Then put it in the blender and blend for 3 minutes. Add ice cream and beat until smooth. Serve immediately with the cassis liqueur.

Red fruit salad

ingredients

  • 1 melon seeded and chopped
  • 1/3 cup brown sugar
  • 2 teacups of water
  • Peel of 1 lemon
  • 4 tablespoons of port wine
  • 250 g of chopped strawberry
  • 250 g of raspberries
  • 100 g of blackberries
  • 500 g of pitted and chopped cherries
  • 1/4 cup chopped almonds

Preparation method

In a pan, over medium heat, add the sugar, water and lemon zest and boil for 5 minutes. Remove from the heat and leave to cool. Remove the lemon zest, add the Port wine and mix. Place all the fruit in a salad bowl, pour over the wine syrup and place in the refrigerator for 2 hours. Sprinkle with almonds before serving.
