Shortcrust pastry made from chickpeas, rice flour and olive oil: different from traditional doughs, very tasty and healthy
A very practical cake, easy to prepare and gluten-free, you can fill it however you want.

Ingredients for the chickpea cake dough
– 160 g of pre-cooked chickpeas
– 2 tablespoons of extra virgin olive oil
– 40 ml of water – or enough to make the point clear.
– 100 g of rice flour
– 1/2 teaspoon(s) of turmeric THE
– Salt to taste
– sweet paprika to taste (optional) ab
PREPARATION:
- Preheat the oven to 200°C.
- Separate the recipe ingredients and utensils.
- This recipe can be made with pre-cooked chickpeas (from the supermarket).
PREPARATION:
Chickpea cake dough:
- Place the pre-cooked chickpeas in a colander, wash them under running water and drain them.
- In a food processor, blend all the dough ingredients (pre-cooked chickpeas, olive oil, rice flour, paprika, turmeric, salt and water – add little by little to achieve consistency).
- Remove and knead with your hands until you obtain a firm and malleable dough.
- Grease one or more refractory or removable-bottom pans, preferably single ones, with olive oil: if you use a refractory or larger pan, you may need to increase the oven time.
- Coat the bottom and sides of the refractory pan(s) with the mixture, distributing it evenly.
- Using a fork, prick the dough so that it does not swell during cooking.
- Place in the preheated oven at 200°C and cook for about 15 minutes or until the pasta is cooked and golden.
- Remove from the oven, leave to cool slightly and remove from the mould.
- Spread the filling you want on top.
FINALIZATION AND ASSEMBLY:
- Bring the plate(s) with the cake to the table, dividing it into slices, if you have used a single pan, or arrange the cake(s) on the plate(s).
- It is also excellent served cold (depending on the filling).
