With delicious pasta, the cuisine of the European country has captured the taste of Brazilians and acquired regional characteristics. Baked Tagliatelle

ingredients

  • 500 g of penne
  • 400 g of milk cream
  • 340 g of tomato sauce
  • 400 g of grated mozzarella
  • 100 g of grated parmesan
  • Salt, ground black pepper and oregano to taste
  • Waterfall

Preparation method

In a pan, add water and salt and place over medium heat to heat. Add the pasta and cook it al dente. Turn off the heat, drain the pasta and set it aside. Place the cream, tomato sauce, salt, black pepper and oregano in a container and mix well. Add the macaroni and mozzarella and stir to combine. Then transfer the mixture onto a refractory surface, sprinkle with parmesan and oregano and cook in a preheated oven at 200ยบ C for 20 minutes. Serve immediately.

Tip: decorate with basil leaves.

panzanella

ingredients

Bread

  • 2 slices wholemeal bread, cut into cubes
  • 1/3 cup olive oil
  • 1 clove of garlic, peeled and crushed
  • Salt and ground black pepper to taste

Sauce

  • 120 ml of olive oil
  • 2 tablespoons of vinegar
  • Salt and ground black pepper to taste

Vegetables

  • 2 cucumbers, peeled and chopped
  • 600 g of seedless and sliced โ€‹โ€‹tomatoes
  • 2 red onions peeled and sliced
  • 2 red peppers, seeded and chopped
  • 50 g of basil leaves

Preparation method

Bread

In a container place the bread, olive oil, salt, black pepper and garlic and mix well. Transfer the mixture onto a baking tray and place in a preheated oven at 200ยบC until golden brown. Turn off the oven and set aside.

Sauce

Place the oil and vinegar in a container and mix well. Season with salt and black pepper and set aside.

Assembly

In a container place the bread, the sauce kept aside, vegetables and basil leaves and mix well. Let rest for 30 minutes to preserve the flavors. Serve immediately.

ingredients

  • 500 g of minced meat
  • 1 onion peeled and chopped
  • 50 ml hot meat broth
  • 2 tablespoons of breadcrumbs
  • 100 g of sliced โ€‹โ€‹mozzarella
  • 2 eggs
  • 1 cup oil
  • 1 cup tomato sauce
  • 1/2 cup grated parmesan
  • Breadcrumbs for breading
  • Parsley for sprinkling

Preparation method

In a pan, place the broth, meat, onion and breadcrumbs and mix until you obtain a consistent mixture. Transfer to a container, cover with cling film and refrigerate for 20 minutes. Then, using a spoon, take a small portion of dough, open it in the palm of your hand and, in the centre, place a slice of mozzarella. Cover with another portion of dough and close the edges by pressing with your fingers. Repeat the operation with the entire dough.

Then dip the meatloaves in the egg, coat them in the breadcrumbs and set aside. In a pan, add the oil and place over medium heat to heat. Using a slotted spoon, fry the meatloaves until golden brown on both sides. Then place them in a container with absorbent paper to remove excess oil. Transfer the meatloaves to a baking dish, cover them with the tomato sauce and sprinkle with the parmesan. Place in a preheated oven at 180ยบ C for 30 minutes. Then serve sprinkled with parsley.

Struffoli

ingredients

Pasta

  • 2 tablespoons of sugar
  • 2 tablespoons butter
  • 1 egg yolk
  • 1 teaspoon of chemical yeast
  • 1/2 cup tea milk
  • 200 g of cream
  • 1 cup wheat flour
  • Fry oil
  • Wheat flour for dusting

Syrup

  • 1 cup honey
  • 5 tablespoons of water
  • Zest of 1 lemon

Preparation method

Pasta

Place the sugar, butter, egg yolk, chemical yeast, milk and cream in a container and mix well. Gradually add the wheat flour and mix until you obtain a smooth mixture. Next, sprinkle a smooth surface with wheat flour, divide the dough into portions, roll into ropes and, with the help of a knife, cut into small pieces. Reserve.

In a pan, add the oil and place over medium heat to heat. Then, using a slotted spoon, fry the pieces of pasta until golden brown and place them in a container with absorbent paper to remove excess oil and set them aside.

Syrup

Place the honey, lemon zest and water in a pan and heat over a medium heat until the syrup has thickened slightly. Turn off the heat, transfer to a container and leave to cool. Then arrange the fried struffoli in a refractory dish, moisten them with the syrup and then serve.

Gratinated burrata

ingredients

  • 1 burrata
  • 1 cup of tea Cherry tomato
  • Salt, olive oil and basil leaves to taste

Preparation method

In a pan, add the olive oil and place over medium heat to heat. Add the cherry tomatoes and brown well. Add the burrata, season with salt and mix well. Turn off the heat, transfer the mixture onto a refractory surface and place in a preheated oven at 220ยบC for 20 minutes. Turn off the oven, top with the basil leaves and serve immediately.
