Gratin sausage recipe
Preparation time: 1 hour

Ingredients:
- 3 tablespoons of oil
- 1kg Tuscan sausage, sliced
- 1 onion chopped
- 2 crushed garlic cloves
- 2 chopped tomatoes
- 500 g cassava cubes
- 1 cup (tea) water
- Salt and chopped green chilli to taste
- 100 g of grated mozzarella
- 100 g of grated parmesan
Sauce
- 2 tablespoons butter
- 1 tablespoon wheat flour
- 1 cup milk (tea)
- Salt and nutmeg to taste
- 1/2 pack of cream (100g)
Preparation method:
- For the sauce, heat a pan with butter over medium heat and fry the flour until yellow.
- Add the milk and cook, stirring until it thickens.
- Season with salt and nutmeg and mix.
- Add the cream, bring to the boil and turn off the heat.
- Heat a pan with oil over medium heat and fry the sausage until it starts to brown.
- Add the onion, garlic and pepper and sauté for 3 minutes.
- Add the tomato and cassava and sauté for another 2 minutes.
- Add water, season with salt and green chillies and cook until softened.
- Transfer to a refractory dish and cover with the béchamel sauce.
- Sprinkle with cheese and place in a preheated medium oven for 10 minutes to brown.
