Feijoada with soya steak and vegetables
ingredients
- 500g cooked black beans
- 2 crushed garlic cloves
- 1 onion chopped
- 100g leeks, cut into slices
- 2 beef steaks soy dehydrated
- 200 g of Parisian or shimeji mushrooms
- 1 bay leaf
- 1 teaspoon cumin
- 1 tablespoon olive oil
- 1 courgette cut into cubes
- 1/2 red pepper cut into cubes
- 1/2 yellow pepper cut into cubes
- 1 carrot cut into slices
- 2 potatoes cut into pieces
- 1 vegetable sausage cut into slices and fried
- Salt and ground black pepper to taste

Preparation method
Soak the soy steaks in a container of hot water for 30 minutes. Then drain all the water, cut the steaks into strips and set aside. In a pan, heat the olive oil over medium heat and brown the onion and garlic. Then add the mushrooms, leeks, steak strips and peppers. Brown for 2 minutes and add the carrots, potatoes and courgettes. Cover with water and add cumin, salt, black pepper and bay leaves. Cook for 5 minutes. Add the cooked beans and fried sausage. Cook until the vegetables reach the desired doneness. Remove from the heat and serve.

Feijoada with vegetable sausage
ingredients
- 500g cooked black beans
- 1 onion chopped
- 5 cloves garlic, minced
- 4 tomatoes cut into cubes
- 400 g of fungus Shitake
- 100 g of tofu
- 3 vegetable sausages, cut into slices
- 1 tablespoon smoked paprika
- 2 tablespoons of olive oil
- Salt, bay leaf, ground black pepper, parsley and chives to taste
Preparation method
In a large skillet, heat the olive oil over medium heat and sauté the garlic and onion until golden brown. Add the vegetable sausage and tofu and sauté until golden brown. Then add the mushrooms and tomato and cook for another 4 minutes. Add the beans and season with salt, paprika, black pepper, parsley and chives. Mix well and cook until desired broth level is reached. Serve then.
Bean and vegetable soup
ingredients
- 500g cooked black beans
- 2 bay leaves
- 1 onion chopped
- 2 cloves garlic, minced
- 1 carrot cut into half moons
- 1 zuchinis dice
- 1 sweet potato cut into slices
- 8 green beans chopped
- 150 g of Japanese pumpkin
- 1 tablespoon olive oil
- Water for cooking vegetables
- Salt, ground black pepper and parsley to taste
Preparation method
In separate pans, cover the vegetables with water and cook over medium heat for 10 minutes. Drain and reserve. In another pan, heat the olive oil over medium heat and sauté the onion and garlic. Add the vegetables, cooked beans, bay leaf, salt, black pepper and parsley. Cook until the broth has the desired consistency. Serve immediately.
