Fugazzeta: how the pizza invented in Argentina tastes


With lots of cheese and onion, this pizza flavor is one of the most popular in the country




It is true that we Brazilians give our interpretation of pizza, with rich and sometimes unusual toppings, but this is not exclusive to us. Even Fugazzeta, the Argentinians’ favorite pizza, has a very particular style.

Without sauce, with a cheese filling between two layers of pizza dough and covered with more cheese and thin slices of oven-roasted onion, fugazzeta is a symbol of the country’s popular gastronomy, and can be found in practically all pizzerias.

The origin of the flavor is popularly attributed to Juan Banchero, one of the founders of the Banchero pizzeria, in the La Boca neighborhood, Buenos Aires, between the late 1800s and the early 20th century. There are versions similar to fugazzeta, such as fugazza con queso, which does not have the double layer of filled pasta, or fugazzeta with ham in the filling.

One of the places well known for its fugazzeta is Güerrín, one of the most famous pizzerias in Buenos Aires. There, the delicacy costs around R$84 (large) / R$72 (small).
