Baked coconut recipe

Ingredients:

  • 2 cans sugar (use empty can of condensed milk to measure)
  • 1 tablespoon margarine
  • 1 1/2 cups (tea) shredded fresh or dried coconut
  • Margarine for greasing

Preparation method:

  1. In a pan, mix the condensed milk, sugar, margarine and coconut.
  2. Cook over low heat, stirring, for 15 minutes or until it releases from the bottom of the pan.
  3. Pour into a 25cm x 35cm baking tray greased with margarine and level with a slightly damp spoon.
  4. Leave to cool, cut into diamonds and serve.
